Cucumbers, Cucumbers and More Cucumbers!

I love making new friends! It is an instant way to perk up your day! It always puts a smile on my face to know that I have made someone else’s day a little brighter!

Well, I had an email yesterday from Kelly. Kelly has started her own site

Anyway, Kelly wanted to know what to do with cucumbers.

It seems Kelly has had a super successful garden and has no clue what to do with that many cucumbers.

So, here are my suggestions.

  • Just peel and eat them with salt! I love them that way!
  • Make pickles (You will have to google this one.)
  • Use in salads!
  • Have a facial! :)
  • Make my delicious Cucumber salad (Recipe to follow)
  • Or…I am still digging around for another recipe I have that is so good! It is for an appetizer that is to die for!
  • Plus, I am sure that you all will leave tons of comments about what else we could use them for ….right?!

Well, Here is my recipe for Cucumber salad. My mom and Grandma used to make this for every holiday! We always looked forward to it. Now, my husband and kids look forward to it too! I make it a little more often than my Mom and Grandma. I don’t know why they didn’t make it more often. It is super simple.

Cucumber Salad

  • 2 Large Cucumbers
  • 1/2 cup sour cream
  • 1 to 2 Tbsp Apple Cider Vinegar
  • 1 Tbsp sugar
  • 1/2 tsp salt

Peel and slice cucumbers into 1/4 inch thick discs.

In separate bowl mix together sour cream, vinegar, sugar, and salt.

Add enough vinegar to taste. You want this to be the consistency of ranch dressing.

Pour over cucumbers and refrigerate.

Serve the same day.

Mom and Grandma used to add onions sometimes too, but it is up to you.

I like just the cucumbers myself!

That is like what i make but i dont use sour cream and i use just white vinegar. i let it soak for a few hour and use it for dinner. my kids ages 2 and 4 LOVE it. very refreshing. im going to try it this way to see how that is, it sounds good!!

Can you ask Kelly to send me some cucumbers?? I have tried three different times to grow them… in two different seasons… and I havent gotten any :(

and I love cucumbers in a zillion different ways! My grandma used to get up early every morning and go into her garden and get 2-3 cucumbers, peel them and put them in a bowl in the fridge just for *me* so I could have them whenever I wanted a snack.
