Split Chicken Breasts! I loathe split chicken. In my book there is only a handful of things you can do with them. Unlike, Boneless Skinless Chicken, which can be used in a ton of recipes. Today, we have found the perfect Short Cut! Something wonderful you can finally do with them! Wonderful timing since they are an essential at Publix right now for $1.49/ lb.
As much as I have come to love Publix, you can find Split Chicken Breast for less than $1.49/lb at different stores. I always keep my eye out for meat deals. Around my house I don’t have a big grocery store variety, but Winn Dixie does have really great meat specials.
We are going to make our own Homemade Chicken Stock. Then use the Chicken for any number of things. This is not only a time saver, but a “deal”icious money saver as well.
Homemade Chicken Stock or Broth

- 3-5 lbs bone in Chicken (Split Chicken Breast)
- 3-4 Quarts water
- 2 tbsp Salt
- 1 tsp Pepper
- 1 Tbsp Garlic Minced
- 1 Carrot Chopped or 1 cup mini carrots
- 3 stalks Celery cut up
- other seasonings to taste

First, we are going to put the Chicken in a large pot.
Cover it with water, I used 4 quarts.
Throw in a couple stalks of celery, carrot, garlic, salt, pepper, and whatever other seasonings you like.
Cover and let cook on medium, medium low heat for about 2 hours.
While cooking, go play a game with the kids, Summer won’t last forever!
Remove Chicken from pot and set aside.
Strain Broth over a large bowl.
Discard veggies.
Place broth in Containers, Jars, whatever you have handy. I place mine in Jars, because I have them on hand for canning. You can keep the broth in the refrigerator for up to a week, OR you can freeze it for up to 3 months. Remember to cool in the Fridge before you place in the freezer.
You may find a thin layer of fat that has congealed on the surface of the stock after you have refrigerated it. Just scrape it off with a spoon.
You now have a rich, flavorful, important ingredient that you can use to make all sorts of soups and stews. It can also be used when you sauté or to deglaze pan sauces. And you won’t believe how much better it is than the salty canned stuff you buy in a store.
Now for that Chicken you set to the side.
It should just fall of the bone.
Pull all of the meat off the bone and imagine of the meals you could create like……

- Make Chicken Salad
- Make Soup
- Perfect for toddlers learning how to eat

Just place in ziploc bags. Can be frozen for up to 2-3 months. Pull out when ready to use.
Makes for some really quick yummy meals!
