I am having a hard time getting motivated this morning. The weekends a typically family time but my hubby’s schedule got messed up this week and he hasn’t made it home yet . When he does he will have a great snack waiting. He is a big fan of White Chocolate! I came across this recipe in one of my gazillion cookbooks!
They look super, they smell even better, and taste unbelievable! The recipe makes enough for a 8×8 pan so you won’t have too many left overs to tempt you. Not to mention they are really simple to make. I hardly even made a mess in the kitchen, which like never happens!
White Chocolate Chip Blondies

- 1 cup plus 2 tablespoons all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup butter or margarine, softened
- 3/4 cup packed light brown sugar
- 1/2 teaspoon vanilla extract
- 1 large egg
- 8 oz White Chocolate Chips

Preheat oven to 350º. Grease 8- or 9-inch-square baking pan.
Combine flour, baking powder and salt in small mixing bowl.
Beat butter, brown sugar and vanilla extract in large mixer bowl until creamy.
Beat in egg.
Gradually beat in flour mixture.
Stir in white chocolate chips.
Press into prepared baking pan with spatula (dough will be thick!)
Bake for 20 to 25 minutes or until golden brown.
Cool completely in pan on wire rack. Cut into bars.
