Weekly Meal Deal: Fried Fish Fingers

Our meal deal is easy and delicious, as usual. Not to mention kid friendly! I see all of these gourmet blogs. I am not going to pretend to be one. My recipes are meant for everyday. They are for everyday families to make and enjoy together. I try to make all of my recipes kid friendly, because who wants to cook twice?

This week, I saw that Catfish Fillets were on sale for $4.99/lb. We love fish! Maybe because we are so close to the water, who knows. Fried Catfish is one of our favorite meals. My kids seem to love anything fried! Last time I made fried fish my son said,” Wow, those are big fish sticks. So this time I decided to make them smaller, like fish sticks.

I told my daughter I was going to make Fish Fingers for dinner. She grinned and said, “Fish don’t have fingers!” I laughed and said,”I know we are eating them for dinner.” Everybody got a big laugh!

This meal is super easy this week. Everybody is getting back to school. It is hard getting back into a routine. At least I know we have had a hard time around here. So, this was meant to be quick. That way, you can get out of the kitchen and get homework, baths or whatever needs to be done, done.

Fried Fish Fingers

  • 1lb catfish fillets (or other white fish)
  • Corn Meal (roughly 1 cup)
  • Seasonings (salt, pepper, garlic salt)

Heat oil in skillet or fryer. If using fryer heat oil to around 375°
Rinse fillets and pat dry. Cut into strips (fingers) as shown.
Place Cornmeal and seasonings in bowl. I use about 1 cup corn meal, 1 tbsp salt and a tsp garlic salt. Everybody has their favorite seasonings, make it your own.
Roll fish fingers in corn meal mix until covered well.
Drop into hot oil.
Cook about 2 minutes on each side or until golden brown.
Serve with lemon, tartar sauce, ketchup, whatever floats your boat!

These, by the way, are Gluten and Dairy Free. If you need them to be Gluten Free check your corn meal. Some aren’t guaranteed Gluten Free!

While I was busy slaving in the kitchen…for the 15 minutes I was cooking. This is what was happening right around the corner. Thank God I invested in some MR Clean Magic Erasers this week!

Anyway, to make this a true Weekly Meal Deal you need sides, right?! Well, like I said, I am trying to make dinner as easy as possible this week. Publix has Sweet Corn Yellow, Bi-Color or White, 4-ct pkg, $2.49. It is super easy to throw some corn in a boiling pot of water for a few minutes. My girls love corn on the cob! The boy….he is just way too picky! :)

Then, head over to the deli where they have their Potato Salad or Macaroni Salad for $2.50. I figure a meat and 2 sides sounds like a great meal to me! Especially since you won’t have to be in the kitchen for very long.

How much is this all going to cost? I can guarantee you that this super quick and easy meal will cost you less than burgers and fries from a fast food place!

If you do then your out of pocket will be less. Just a tip. I got the Catfish at Winn Dixie for only $3.99/lb! That is $1 less than Publix!

  • Catfish Fillets $4.99/lb
  • Cornmeal $1.50
  • 4 pk Corn on the Cob $2.49
  • Potato Salad from the Deli $2.50
(If you are going to buy lunch meat from the deli too, use this $3 off a $10 FLIP if your Publix will take it!)

Grand Total is $11.48
Divide by 4
That is only $2.87 per person!

That is such an awesome deal for a delicious meal!
So much less than take out for no more than 15 minutes in the kitchen!

I love the floor! We seem to have pen all over the walls. Any hints on getting that off???
