Weekly Meal Deal: Night 2 Brunswick Stew & Biscuits

My crockpot is definitely earning it’s keep lately. I may even upgrade to a new one before long. Mine has seen better days, but it still cooks so that is all that matters.

Well, I emailed Michelle from I Heart Publix to get my match ups this week. She is the one who came up with the great idea for 2 meals. I just kinda ran with it. I mean with free pork who can blame me!

So, she sent me a really great recipe for Crockpot Brunswick Stew. I was all set to put it in the crockpot this morning. I walked over to the computer to pull up the recipe and it was gone! Who knows what happened. I mean with 3 kids in the house it could have been any number of things. I had read the recipe several times, so I kind of knew what went in the pot.

That is the great thing about this recipe! It is an everybody in the pot meal. No special prep, no second guessing. Just throw it all in and go. If you don’t have something on the list, substitute or leave it out. No one will know the difference

SO, I will stop rambling and finally give you the recipe to my version of Brunswick Stew. Did I mention I made fresh biscuits?

Short Cut Brunswick Stew

  • 1½ to 2 cups BBQ Pork
  • 2 potatoes cut bite size
  • 8 oz cut okra (I had Whole Okra so I cut it)
  • 1 can creamed corn
  • 1 can diced tomatoes with onions
  • 1 medium onion diced
  • 1 Bell Pepper diced
  • 1 can tomato sauce
  • ½ cup chopped celery
  • 1 Can Lima Beans
  • 2 cups Chicken Broth ( Use the Broth you homemade!)
  • 1 Tbsp garlic
  • 1 Tbsp salt
  • 1 tsp pepper
  • 1 tsp oregano
  1. Turn your crockpot on low!
  2. Now….everybody in the pool!
  3. I left out the Lima Beans because my hubby says, “They make my ears itch.” The only other person I have ever heard say that in my life is my son. It is so weird!
  4. You can also substitute any kind of meat. We are using BBQ Pork because we had it left from yesterday. You could use chicken, or mix the 2.
  5. Leave in Crockpot on Low for 5-6 hours!
  6. This is so good!

Short Cut Sweet Buttermilk Biscuits
This recipe is a favorite at my house. When I make a pan they are gone! Not a crumb in sight. They are a sweet biscuit and are really good in the morning with jam. I even make them when I make chili!

  • 2½ cup All Purpose Flour
  • 3 TBSP Sugar
  • 1½ TBSP Baking Powder
  • ¼ tsp salt
  • ½ Cup Unsalted Butter, Softened
  • 1 Cup Buttermilk…or regular milk with a tsp of vinegar.


  1. Combine Flour, sugar, baking powder and salt in mixing bowl; blend well.
  2. Add Butter…I use my fingers.
  3. Stir in buttermilk until just mixed. (Don’t have buttermilk? Don’t worry Use a little less than a cup of milk and add 1 tsp vinegar. It will do the trick.)
  4. Spoon Batter into greased Muffin tins and bake at 350° for 30 minutes.
  5. Turn out and serve warm
  6. Makes about 12 biscuits.

  • BBQ Pork = Free leftover
  • Fresh Okra $1.99/lb= $1
  • Potatoes= Free leftover
  • Libby’s Canned Corn (2) $2
  • Libby’s Canned Lima Beans (1) $1 Now use this B2G1 Libbys Q = $0
  • Chicken broth…should be free if you still have some left. If not $1.50
  • Muir Glen Tomato Sauce Small Can (2).99¢ use $1/2 Q
  • Can of Diced Tomatoes $1.20
  • Celery bunch $1.25
  • Onion $0.75
Grand total of $8.69
Assuming you have the ingredients for the biscuits.
Divide by 4
$2.17 per person.
Not bad for the second night of this great meal deal!
Now my daughter wants to know what is for “Snack”urday! A woman’s work is never done! :)
