Halloween: Ghostly Joes Lunch

I had planned on making the weekly meal deal today.  I was going to make “Not So Sloppy Joes.”  I thought I could make up Sloppy Joes,  tuck them into the crescent roll dough and make like a hot pocket.  Sounds good?! Right?  It didn’t work out the way I wanted.  The Sloppy Joes were too hot and made the crescent roll dough completely unmanageable!

For future reference….DO NOT try to put a hot filling into a crescent roll!   After that experiment, I had my brain rolling.  We could stuff the crescent rolls with ham and cheese and make little hot sandwiches, or do a little pizza pocket.  You could still do the Not So Sloppy Joes, you would just have to cool the filling first.  Great for leftovers!

So,  here I was in the kitchen with a pan full of sloppy joes.  Hmmm…..what could I do.   So, I mixed in a drained can of corn.   Then I placed it in a casserole dish.   Now for the crescent rolls.   I already had them out.

I layed them out and rolled them with my rolling pin.  I took a ghost cookie cutter and cut out 4 ghosts and placed them on top of the Sloppy Joe mix.  I baked for 15 minutes at 375 degrees.

Voila! A perfect Halloween lunch!  My kids loved it!  You could even top this with cheese!  So good!

Don’t worry! I will have a Weekly Meal Deal for you tomorrow!  You will have to give me time to rethink what I will make.

I use the Pillsbury Pizza Crust. Roll out and divide into four equal parts. Add your filling and fold over to make a pocket . You have to be careful not to overfill. Seal edges with a fork. My whole family loves these. We’ve done ham & cheese, pepperoni & cheese, chicken with bacon and mozarella. YUMMY!
