I apologize for my schedule being all messed up this week. There has been sickness all around at my house. I am hoping we are all recovering and next week will be better!
I wanted to do something different this week but stick with the Crock Pot….because I am in love with it at this point! There are options this week! We are making Meat and Bean Burritos night one! So, you could make enough burrito filling for 2 dinners and put half in the freezer for another night. OR…you could reserve 1/2 of the meat for BBQ Beef Sandwiches which make a great dinner or weekend lunch!
These Burritos turned out better than I expected. The meat is so tender and they are just delicious. This is a must try!
Meat and Bean Burritos
- 3lb 7 bone in Chuck roast
- 1 can tomato sauce
- ½ cup chopped onion
- 1 packet Taco seasoning
- 1 can of re-fried beans
- Tortillas
- Tomatoes
- Salsa
- Lettuce
- Cheddar Cheese
- Sour Cream …etc…

Place Chuck roast in crock pot. Pour Tomato sauce and onions over roast. 
Cover and cook on high for 6 hours or on low for 11.
Open Crock pot, Meat should fall right off of the bones. Remove bones from crock pot.
Remove half of the meat for another dish.
Mix in a single packet of taco seasoning to remaining meat. Cook on low for 15min.
Stir in can of Refried beans. Leave mixture on low until ready to serve. 
*If you would like to use all of the meat to make the burrito filling use 2 packets of taco seasoning and 2 can of Refried beans.
Serve on Tortillas, and top with Cheese, Salsa, lettuce, whatever your heart desires.
This makes a ton of burritos! Very Filling!

Now for the other half of the meat.
You could make burritos again or add a bottle of BBQ sauce to it and have some really great BBQ Beef Sandwiches for dinner or lunch one day! That is what we are doing!

This is really misleading this week because the burrito dinner could serve way more than 4 people. You could also stretch the filling by adding rice!
This meal could also be Gluten and Dairy Free. For gluten free use corn tortillas. For Dairy Free leave off the cheese and use Dairy free Sour Cream!

Ok – I admit what I will say will sound weird – but I ran across your recipe the other week when the HORMEL pot roast was on sale BOGO. So I thought – hey, it is the same concept right. I cooked the pot roast in the microwave per the instructions on the box and then used the ingredients from the rest of your recipe…YUMMO! My hubby was so amazed – I was out of wraps so we put it over chips. A very quick and easy mexican meal. Thank you for helping spark some creativity in my meals that was lacking!
