Weekly Meal Deal: Crockpot Cranberry Chicken

DSCN2582Alright Ya’ll, now don’t get too used to me being on time with the Meal Deal.   I just so happen to be on top of things so  far this week.  Let’s see how long that lasts :) .

I am sticking with the Fall flavors, because here in Sunny Hot Florida that is the only way I can make it feel like Fall.  I had the kids outside this afternoon and we had Popsicles and actually had to come inside because it was too hot to play.  They are talking about busting out the slip and slide this weekend.  Crazy kids!  Well, we have been known to be found in the pool in November here in Florida.  Just crazy weather!

I hope you guys are enjoying the Fall!  I know I sure enjoyed the Caramel Apple Pork Chops last week.   So much so, that I entered them into the Publix Apple Recipe Contest.  Cross your fingers for me.  If I win….I can guarantee a giveaway!

Alright,  I couldn’t resist using my ole’ faithful crock pot again this week.  Cranberry sauce is a weakness in my house.  If there is a can we will eat it!  This time is no different with this great Cranberry Chicken Recipe!

Crockpot Cranberry Chicken

  • 1 Whole Chicken or 4 Chicken Breasts
  • 1 Can Cranberry Sauce (whole or Jellied)
  • ½ cup orange Juice
  • ¼ cup Brown Sugar
  • ¼ tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp salt
  • 1TBSP Corn Starch or other thickening agentDSCN2555

In a small bowl mix brown sugar, cinnamon, nutmeg and salt.  DSCN2558

Rub the mix onto a whole chicken.  Make sure you rub it under the skin as well.DSCN2559

Pour ½ cup Orange Juice into Crock pot.

Place Sugar rubbed chicken in the crock-pot with the juice.DSCN2560

Spoon Cranberry sauce over chicken.  Cover and cook 5 Hours on High or 8 Hours on Low.DSCN2561

After the Chicken is finished remove it from the Crockpot and let it rest at least 10 minutes before slicing.

While resting whisk in 1 Tbsp of Corn Starch into the drippins in the crockpot.  Crank the crock pot on high until thickened.  Makes some awesome gravy to serve the Chicken with!DSCN2579
