I stopped in Winn-Dixie this week while I was out running errands. The past couple weeks when I have gone in a coupon prints out of their catalina machine for $10 off a $50 purchase only good for that weekend. So, I take it and use it at Publix. It is a win win!
ANYWAY, I went in to Winn-Dixie to grab some soy milk and a couple other items, and I found that 1 lb bags of Pecans were BOGO! That was amazing to me because they are so expensive to bake with during the holidays! So I stocked up! I love baking! In case you can’t tell!
I believe I would be as big as a house if I didn’t give some of it….ok…..most of it away. Sorry neighbors!!
Well, one of our favorites at my house are these Pecan Pie Bars. They are soooo yummy. This has got to be the absolute best recipe in the world for these.
Pssst….don’t tell anybody….but…..they are even better if you melt caramel and drizzle it over the top!
I am not sure that it is waist friendly, but I am willing to excersise a little longer to make up for it! Check them out!
Pecan Pie Bars
Crust
- 2/3 cup sugar
- ½ cup butter or margarine (softened)
- 1 tsp vanilla
- 1 ½ cups all purpose flour (you could use all purpose GF mix)
Filling
- 2/3 cup packed Brown Sugar
- ½ cup Corn Syrup
- 1 tsp vanilla
- ¼ tsp salt
- 3 eggs
- 1 cup coarsely chopped pecans

Directions
Preheat oven to 350 degrees.
Lightly grease bottom and sides of a 13×9 inch pan.
In a large bowl mix sugar, butter, vanilla, and flour. Mix well.
Press dough in bottom and ½ inch up the sides of the 9×13 pan.
Bake 15 minutes until edges are golden brown.
While Crust is baking; beat brown sugar, corn syrup, vanilla, salt, and eggs in a medium bowl.
Stir in pecans.
When crust is finished, pour pecan mixture over crust and bake for another 25 minutes or until set.
Loosen edges from sides of pan while warm; cool completely.
Cut into bars and serve.
As an added bonus you could melt chocolate or caramel pieces and drizzle over bars before cutting!
