Tide You Over Tuesday: Quick Coconut Cupcakes

DSCN2757Coconut Cake is one of the most requested desserts in my house.  I will save that post for another day!  Tonight is the next best thing.  Quick Coconut Cupcakes.  They are just smaller versions of their predisessor!

Sorry my recipes have been few and far between this week.  I am picking things back up.  I have recipes picked out for Weekly Meal Deal and Snackurday and they are both going to be out of this world!

Now for my Quick Coconut Cupcakes

Quick Coconut Cupcakes

  • 1 Yellow Cake Mix (Try the new Betty Crocker GF Cake Mix)
  • 1 can of White Frosting (Duncan Hines has a GFCF icing)
  • 1 bag of Sweetened Shreaded CoconutDSCN2736

Mix cake mix according to the package directions.

After batter is mixed fold in 1/2 cup of shreaded coconut.DSCN2740

Bake as directed.

Allow cupcakes to cool completely.DSCN2747

Ice with Frosting and top with shreaded coconut!

These are super dessert, or great for a birthday!  They are already disappearing fast around here!
