Christmas Ham: What to do with leftovers?!

If you are like me, you have had Ham Sandwiches and still have ham left.  I am horrible about buying a huge ham.   I love it on Christmas, it is so good the next day, but a few days later everybody is like, “We still have ham??!”

So, I thought I would bring you a few ideas of what to do with that ham.

You may freeze leftover ham for up to 6 months, but for best quality, the NFSD recommends 2 months. Freeze whole cuts or meal-sized packages of diced ham for casseroles, or larger pieces for flavoring beans, soups, or stews.  Here are A Few Short Cuts for using leftover ham:

  • Scrambled eggs, fritattas, or omelets.
  • Add to your favorite macaroni and cheese casserole.
  • In scalloped or au gratin potatoes, from a mix or homemade.
  • Add to corn pudding or casserole.
  • Sliced, in sandwiches.
  • Diced and added to appetizers like tortilla rolls.
  • Add to Alfredo sauce with chopped green onions for a tasty pasta-topper.

Christy Jordan of Southern Plate Fame, has a phenomenal recipe for Black Eyed Peas for New Years Day!  She also tells us why.  Which is something I didn’t know until a few years ago!  I will let her handle this recipe.
