Like many of you, I am trying to watch what I eat to shed a few pounds. I can no longer use the excuse, “I had a baby.” She is now 2. She is no longer a baby, yet, I still am carrying extra LBS. I don’t want to cut good food out of my diet completely. I know that I just need smaller portions, and healthier choices.
These little desserts are great! They are in small portions, so you won’t over eat….unless you eat 2
. They are light, yet filling. Plus, they make use of the Pepperidge Farms Puffy Pastry cups that I found on clearance at Winn Dixie that I just knew I would have a use for
. SO, let me know what you think! I hope you love these as much as we did this evening!
Light Lemon Berry Pudding Cups
- 1 4oz box Instant Lemon Jello Pudding
- 1 Pkg Pepperidge Farms Puff Pastry Cups
- 1 cup Cool Whip
- 1 ¼ cup Milk
- 1 cup Raspberries (frozen is fine)

Directions
Bake Pastry Cups as directed on package. Mine said 20 minutes at 400 degrees.
While pastry cups bake; Wisk together Pudding mix, milk, and cool whip. Place in fridge while cups bake.

Allow cups to cool when they come out of the oven. Scoop out the inside to make it a cup.

Fill cups with pudding mixture.
Top with raspberries.
Serve!
By the way, I have no Idea why my puff pastry cups leaned to one side. Oh well, they were still good!
**Tips** There are 6 pastry cups to a box. There is plenty of filling for all 6!
You can change the flavors around. Use a different flavor pudding with a different fruit! YUM!

These sound fantabulous! I have the pastry puff in my freezer. I don’t know what I have in my freezer for fruit. I am going to find out tomorrow.
Thanks Stacie! They are really great! I can just imagine some great combos! Chocolate and hmmm…anything!, banana and strawberries. I could go on and on, but I am making myself hungry again!
Uh…yum! Those look really good! Maybe I will try and whip some up tomorrow as a treat for my hubby who has been outta town! A little surprise for him when he gets home! I think the fact that I cooked would be the biggest surprise for him…LOL!

What did you do with the insides that you scooped out? I would’ve eaten them… which would’ve completely negated the purpose of having a light dessert. Ha!

Those look so good! Let’s see…I have strawberries, blueberries and peaches in the freezer, and lemon, white chocolate and vanilla pudding in the pantry. Some nice combos there I think. Plenty of Cool Whip, too…so all I need is the Puff Pastry. It’s going on my shoppimg list for this week! Shoot…I think I even have a coupon for that somewhere, too! We had dinner with folks last night and I made these for dessert. I used sugar free white chocolate pudding and sugar free cool whip and had fresh strawberries to go with. They were fabulous. I am also going to try with banana cream pudding and fresh bananas ( a new twist on banana pudding!)
