I am excited about this week’s meal deal! I am prepping for our Super Bowl Party. Let me start by saying, this will not be a large affair! It will be just a small party at home with the hubby, kids, and myself. We all enjoy watching the game or the commercials (depending who you ask). We all enjoy having snacks, and just relaxing, laughing and cheering together!
I have not been very good about planning meals this week, but this meal deal takes care of 2! We are making Meatball Subs on Night One, and then you can use the leftover meatballs another night for baked spaghetti! All of the above are super simple! Great for those of you who work all day and don’t want to spend all night in the kitchen! You could even make the meatballs on a weekend when you have time. Then, just throw everything together during the week! These meals are so simple and delicious.
Almost everything you need for these meals is on sale at Publix this week, which makes it that much nicer! I love being able to feed my family on a budget. It is so easy to make your money stretch; it would be a crime not to! The Grocery list, coupons, and totals will be after the recipe!

Let’s see, first you need the meatball recipe.
Meatballs
Printable Version of Meatball Recipe
- 2 lbs ground beef
- 1 cup bread crumbs (Click to see my homemade GF bread crumbs)
- 1 egg
- 1 clove garlic minced
- ¼ cup finely chopped onion (optional)

Directions
Preheat Oven to 400 degrees.
In a large bowl mix all the ingredients.
Shape meat mixture into golf balls sized balls and place on a broiler pan.
Bake meatballs for 20-25 minutes.
Makes about 25-30 meatballs depending on size.
These can be made ahead and frozen up to 3 months!
Just toss frozen meatballs in pasta sauce while it heats. This will reheat the meatballs.
Meatball Subs
Super easy!
Purchase some Hoagie Rolls at the Grocery store. Or make your own with this French Bread Recipe (So easy)
Heat Meatballs in Spaghetti sauce until warm.
Place about 3-4 meatballs in each roll.
Top with a little extra sauce and mozzarella cheese.
Place under broiler for about 3-5 minutes or until cheese is melted. (Watch closely so they don’t burn!)
Baked Spaghetti

This is always a huge hit!
Preheat oven to 450.
Cook pasta according to package.
In sauce pot heat jar of spaghetti sauce and meatballs.
In casserole dish mix Spaghetti noodles, with sauce and meatballs.
Top with 1-2 cups mozzarella cheese (depending on how cheesy you like it)!
Place in oven and let bake until the cheese is melted and bubbly. About 10 minutes.
So So So “Deal”icious!

If you don’t have a broiler pan, what can you use instead??

You can use a regular baking sheet with edges, covered in aluminum foil. The only thing that would be different is the fat from the meat wouldn’t drain. So, they would be a little bit greasier. I just prefer the broiling pan because the grease has a place to go. Hope this helps.
