Weekly Meal Deal: One Skillet Creamy Chops and Rice

Wow! Is it really already Thursday night?  Where has this week gone?  I have been so busy, and I am not sure that I could tell you what I have accomplished.

I studied the Publix sale this week.  The pork chops were a great price, but assorted pork chops are never that great of a quality.  So, I had to think hard!  There were times (pre-couponing) that the really cheap meats were all we could afford.  This recipe is not only budget friendly but delicious!  Did I mention quick and easy!

It is also very versatile.  You can change the ingredients around and turn it into several new recipes.  I typically use what I have on hand.  This is one of those meals you can throw together with items from your pantry and freezer in no time! Plus, you only have one skillet to clean!

One Skillet Creamy Chops and Rice

  • 4-6 pork chops (boneless/or bone in)
  • 2 cups regular long grain rice
  • 2 cans Cream of Mushroom Soup
  • 2 cans water
  • Salt and pepper
  • 2 tbsp. olive oil
  • 8 oz. frozen peas

Directions

Place the olive oil in a large skillet over medium heat.

Season Pork chops with salt and pepper. Cook the pork chops in the skillet for about 5 minutes per side, or until cooked through.  It all depends on the size of the chops.

Remove the Pork chops from the pan and place on a plate.

Hmm....not my plate. I need to give that back to Granny.

Whisk together the 2 cans of soup and the 2 cans of water.   Pour into skillet.  Heat the soup mix until boiling.

So I'm not perfect. I did spill on my stove. That is what cleaner is for.

Add rice, cover and reduce heat to medium/low.  Allow rice to cook for approx. 15 minutes.

Remove lid and add peas, stir.  Place pork chops on top of veggies and rice.  Cover and allow the food to cook for another 5 minutes.

Remove lid and Serve!

**Options**

You can change this recipe in so many ways.

  • Use a different type of cream soup.
  • Use a different frozen veggie.
  • Use Chicken instead of pork.

Total Estimated Cost $8.48

  • Divide by 4 = $2.12 per serving
  • Divide by 6 = $1.41 per serving

This is a super meal deal.  There is plenty of rice for 6 and you will have an extra pack of veggies!  You could make this meal cheaper by using items you already have in your stockpile. These prices are for the week starting Jan 17th at Publix.

Rice**This is something I always have in my pantry.  I purchase a 5 or 10 lb. bag and it lasts a long time.  This is a great item to keep in stock.  It is also very inexpensive!”

Thanks for the recipe, I’m visiting from Michelle’s site…I made this last night with a couple of changes ;) (I always tweak stuff) I sprinkled the chops with some lipton onion soup mix before browning, very tasty. Also it took my rice a LOT longer to cook, maybe I turned it down too far? I also had to add some more liquid. I passed this onto my mom who also made it and she used minute rice and hers cooked up perfectly=who knows! Thanks for your recipes!

We make a very similar meal, except with chicken instead of pork chops. It’s simple to make, but it’s one of my absolute favorites. The pork chops look like a great substitute, if we feel adventurous some night.
