It has finally warmed up a bit here in Sunny Florida. “Sunny” would not have been my word of choice to describe our weather a couple weeks ago. In fact, if I would have had the ingredients for this meal on hand I probably would have made it while it was FREEZING outside.
I know some of you actually have seasons. So, it is still cold at your house. This is a great warm you up dish. Plus, I love 1 pot meals. That meals not as many dishes! My kids love stew and chili. Especially with homemade biscuits! YUM! One of the bonuses of this recipe is that it is Gluten and Dairy free! So, everyone in my house can enjoy this delicious meal. I can’t tell you how tired I get of cooking more than one meal, either because of an allergy, or a picky child.
This meal requires very little work on the chefs part. It does stay on the stove for awhile, but you only have to check on it occasionally. It cooks itself!
To make and serve this meal with some crescent rolls will only cost you $2.88 per person this week, with extra groceries on top!
Savory Beef Stew
Savory Beef Stew Printable Version
- 1 lb. Stew meat
- 3 cups beef broth (or 3 cups water w/3 tsp. beef bouillon)
- 1 packet Lipton Onion Soup Mix
- 4 cups water
- 2 Potatoes cut into bite sized pieces ( about 2 cups)
- 1 large bag of frozen mixed veggies (or 2 small bags)
- ½ tsp. salt
- ¼ tsp. pepper
- 2 TBSP corn starch mixed with an equal amount of cold water

Directions
In a stockpot or Dutch oven, combine stew meat, broth, onion soup mix, and water.
Bring to a simmer and simmer uncovered for 10 minutes.
Cover and cook over low heat for about 45 minutes.
Add potatoes, recover and cook another 20 minutes.
Now, add the veggies, and seasonings as desired. Cover and allow to cook for 40 minutes.
In a small dish combine the cornstarch with an equal amount of water.
Stir into the stew mixture. Continue to cook, stirring occasionally for about 10- 20, until thickened.
Taste and adjust seasonings.
Serves 4 to 6
