		<description>Great Question!  I did, just because my husband would rather have it over cooked than under cooked.  Plus, I used Italian sausage (raw when started). If you used Andouille sausage it is smoked, so already cooked when you purchase.  It depends on what kind of sausage you use.  

If you are going to use Italian sausage like I did.  I just tossed it in a  pot on the back of the stove and boiled it while the other ingredients where cooking.
