Weekly Meal Deal: RERUN..Spanish Rice Dinner

It’s Easter Week, and as much as I would like to have enough time in a week to do it all.  I just don’t.  So, this week you are getting a Meal Deal Rerun!  Spanish Rice Dinner!  This is a great quick and easy meal!  Perfect for any busy family and the ingredients can be found in you freezer, and pantry for any day of the week!

This is one of my go to meals!  So I thought I would repost it for you guys that didn’t see it the first time around.  I hope everyone has an amazing Holiday weekend.  My weekend is packed full of family time activities,  but I will try to update the site as much as possible.

Spanish Rice Dinner

  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 1/2 green pepper, chopped
  • 1 tbsp minced garlic
  • 1 cup uncooked rice
  • 1 (15 ounce) can diced tomato
  • 3/4 cup hot water
  • 1 teaspoon chili powder
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • pinch of oregano

DIRECTIONS

In a skillet, brown beef, onion, green pepper, garlic.

Add rice, Water, Tomatoes, and spices;

Mix well! :)

Bring to a boil. Reduce heat; cover and simmer 20 to 25 minutes or until the rice is tender.

Dinner is served!

I served with Crescent Rolls and a salad!  More than enough for 4 people!
