“Snack”urday: Brownie Ice Cream Sandwiches

Yep, uh huh….Do I need to say anything???

**DISCLAIMER** These are not low in calories, nor do they pretend to be.  Avoid if on Weight Watchers, or any other weight loss program! :)

I’m sorry, but I couldn’t resist folks.  It’s getting hot outside, and the sound of a nice cold ice cream sandwich was just too good to pass up.  When I was pregnant with my oldest I ate enough ice cream sandwiches for a whole family.  Seriously,  the lady at Albertson’s used to look at me funny.  I would go in once a week and buy one of those warehouse store size boxes of ice cream sandwiches.  They were so good!

So, in memory of all of the ice cream sandwiches I used to eat, I thought up this gem.  My kids are so weird, because of their allergies.  I can’t buy store bought ice cream sandwiches, so I did the next best thing and made them.

Here is what you will need…

  • a box of brownie mix ( I used Gluten Free)
  • ingredients to mix with box of mix
  • ice cream of your choice (You could even use dairy free)

That’s it!

I made the box of brownies and let them cool completely before I cut them.

Then, I pulled the box of ice cream out of the freezer.  You want it to be soft when you make the sandwiches.  So, wait a couple minutes, or do what I did and stick it in the microwave on 50% for about 1 minute.

Place one scoop of ice cream between 2 brownies (size is up to you).

Wrap with wax paper and freeze for atleast an hour.

Unwrap and enjoy!

You could change these up for your own taste too!  You could use mint ice cream, or use blondies and a caramel ice cream.  Really the possibilities are endless.

Don’t limit yourself because of food allergies.  You can always find an alternative ingredient!

You’re killing me here, Mandy! Except that for those of us on weight watchers we could splurge with a Vita Muffin Brownie halved (1 point) and a scoop of fat free/sugar ice cream or frozen yogurt (about 2 points) and still have a decadent dessert for about 3 points. Great idea and it can be not only gluten and dairy free but calorie friendly too.

Sorry Aunt Rachel! I just couldn’t resist! I thought about the Vita Muffin Tops too! I just didn’t think of halving them. :) It’s all or nothing!

Thanks Rachel! I just started Weight Watchers 2 weeks ago and I always look forward to your recipes Amanda but this one is torture!! I think I’ll try it the way you suggest Rachel and if that isn’t good enough, I may just have to make a small one for me with Amanda’s recipe! I’m sure the kids and my husband will consume the rest without me even having the chance to reach for another one!

Wow, that looks delicious! I am hosting fourth of July this year for my family and the inlaws…these are absolutely on the dessert menu now :D
