Weekly Meal Deal: Shake & Bake Pork Chops w/Zucchini Fries

This week’s meal deal is simple, yet delicious! I am even giving you guys a little treat.  Since I have been behind the past couple weeks I thought I would give you 2 recipes for the price of 1.  Yep, you are getting 2 recipes tonight!

I saw that the Pork Loin Chops are on sale for $3.69/lb.  While I was at the store they had the Pork loins on sale for $2.49/lb.  Why am I paying Publix $1.20/lb to cut my meat??  So, I bought the Loin and cut it into pork chops myself.  I left the other half as a roast for a quick crock pot BBQ Pork dinner one night next week. So, I got 2 meals for $9!  Plus, there will be left overs! SCORE!

I am loving the fact that all of the summer vegetables and fruits are starting to hit the stores!  I saw fresh corn on the cob, huge eggplants, watermelon, and tons of summer squash and zucchini.  OH Zucchini, I have tried to like it.  I have made casseroles, and pasta dishes, and even stuffed it.  I just can’t make myself eat zucchini.  I am trying to set a good example for my kids.  I let them watch me taste it every-time I try it.   They know I don’t like it.  It’s some kind of torture!  After researching this horrid vegetable I finally came up with a way to cook it that I thought I may like.  I made Zucchini Fries.  Hey, if it is battered and fried it has to taste better, Right?!

Shake and Bake Pork Chops

Directions

Preheat oven to 375 degrees F.  Cover baking sheet with aluminum foil for easy clean up!

In a bowl whisk together the egg and the water to create an egg wash.

Dip Pork chops one at a time into the egg wash, and then into the crumbs. Make sure they are coated well.

Place pork chops onto baking sheet and bake for 30 minutes or until cooked through depending on the thickness of the chops.

Serve with potatoes, salad, anything that sounds yummy!

Zucchini Fries

Zucchini Fries Printable Version

  • 2 Medium Zucchini
  • 2 eggs
  • 2 Tbsps. Water
  • 1 ½ Cup flour
  • 1 tsp. paprika
  • 1 Tbsp. garlic salt
  • ½ tsp. pepper
  • Vegetable Oil for frying

Directions

Heat the oil in a skillet, or Dutch oven for frying; about 350.

Peel and cut zucchini into fry shapes.

In a bowl whisk together the egg and the water to create an egg wash.

In a separate bowl, mix together the flour and spices.

Dip the Zucchini into the egg wash, and then into the flour mixture.  Make sure they are coated well.

Drop them into the fryer and cook for about 2-3 minutes or until golden brown.

Salt and serve immediately.

For my gluten free folks you can use the Bread Crumbs instead of the flour mixture, or use rice flour.

Sauce

For a great little dipping sauce mix equal parts ketchup and mayo.  Sprinkle some pepper and voila!

This sauce is great for fries, onion rings, etc.!

A great way to have zucchini (and other veggies) is cut slices and put in a bread bag, sprinkle some olive oil and Paul Prodhomme’s Vegetable Magic (in spice aisle) and grill. Yummy, much better than fried zuchinni! I grew up with parents who pretty much only fried it, I still don’t like it that way:)
