A great way to have zucchini (and other veggies) is cut slices and put in a bread bag, sprinkle some olive oil and Paul Prodhomme’s Vegetable Magic (in spice aisle) and grill. Yummy, much better than fried zuchinni! I grew up with parents who pretty much only fried it, I still don’t like it that way:)
