Here is a sentence I would have never thought I would have said a year ago. I was on Twitter and I read a tweet about a recipe contest from RoTel Tomatoes. It is the Ro*Tel Across America Recipe Contest. The only major rule is that it be creative and you use a can of Ro*Tel Tomatoes. Do you know how limited that kind of makes the recipe pool? You can’t really make a dessert. There goes like 50% off my recipes.
The contest will go a little something like this.

- Recipe Submission Closes – June 13th, 2010, 11:59 P.M. EST
- 10 Finalists Announced, Voting Begins – June 16th, 2010
- 10 Finalists Voting Ends – June 30th, 2010, 11:59 P.M. EST
- Contest Winner Announced – July 7th, 2010
There will be Facebook Fan voting once the 10 finalists are announced. The winner will get ~drumroll~ $2000! I could us that money for so much! Including a new laptop so you guys don’t miss out on Shortcuts when I am away from home.
Social Media is like me knew buddy. Between Twitter and Facebook not only have I grown A Few Short Cuts, but I have met some really great people and readers. If you have never tried either one I recommend trying to learn. They are both a great tool. A big thanks to the Disney Social Media Moms Conference I attended in February for opening my eyes to social media a little more!
So, anyway, this weeks recipe is the one I submitted for the recipe contest. Its a deal because the ingredients are not expensive ones, and this meal is so simple. You should keep it in your recipe arsenal for one of those, “What’s for dinner?” Days. I don’t have a typical price matchup this week, but I know this a cheap one. Try it and let me know what you think.
Spicy Chicken and Yellow Rice
Spicy Chicken and Yellow Rice Printable Version
- 4 Pieces of Chicken, skinless, (bone in or out)
- 1 can of Ro Tel Mild Tomatoes
- 1 tsp Garlic Salt
- 1 tsp Oregano
- 1 Tbsp Olive Oil
- ½ tsp onion powder
- 1 tsp salt
- 1 package yellow rice mix (I prefer Vigo)
- 1 cup frozen peas
Directions
Preheat oven to 350 degrees.
In a large baking dish place chicken pieces (I used skinless split chicken breasts.)
In a medium bowl whisk together a can of Rotel Tomatoes, Spices, and olive oil.
Pour over top of chicken and bake for 30-40 minutes or until cooked through.
While the chicken is cooked prepare rice following the packages directions. 2 minutes before it is finished cooking stir in the peas. This will allow the peas to cook with the rice.
Serve Chicken and Rice with a Green salad and Cuban bread.
The way I see it this meal should cost right around $1.63 per serving
- 2 lb Split Chicken Breast $1.50/lb ($3.00)
- 1 can of tomatoes $1.25 (est)
- 1 package of Vigo Yellow Rice $1.25
- Small bag of frozen peas $1.00
Total about $6.50
Divide by 4
$1.63 per serving (estimate)
I told you, I may not have matched it up perfectly, but it is a deal none the less!

My SO always asks for me to make things spicy. I made this with legs and thighs and only changed the oregano to 1/2 tsp. It was delicious!
