Guest Post: The Cucumber Experiment (Refrigerator Pickles)

I had cucumbers coming out of my ears from one plant, so I put a plea out to my readers. They always come through for me. They suggested I make refrigerator pickles.

Here is my own combination of several recipes I found:

Refrigerator Pickles

  • 7-8 cucumbers sliced thinly
  • 1 medium onion diced or sliced
  • 1 ½ cup of white vinegar
  • 3 cups of sugar (ouch, I know)
  • 1 ½ Tbsp. Salt

Heat the vinegar, sugar and salt over medium heat until the sugar dissolves completely. Pour this mixture over pickles and place in covered containers/jars. I used some free Ziploc containers I picked up this week.

I am sure they will taste better after a little time in the fridge, but I snagged a couple to try and they were delicious!
