Tide You Over Tuesday: Sweet and Crunchy Chicken Salad

With Back to School only a couple weeks away for some of you it is hard to think of new things to pack in the old lunch box.  There are the old standbys of PB&J, or ham sandwich.  Kids like exciting!  They really do like to show off their lunch! They want to be the one everyone wants to trade lunches with.

Make lunchtime full of surprises! Try packing a sheet of stickers for them to share with their friends, or a little note just to show them you are thinking of them.   Any kind of little “Surprise” makes their day at school that much better! You would be shocked at how much a few minutes of your time means to them.

Todays recipe is for Chicken Salad, but not just any chicken salad! Sweet and Crunchy chicken salad.  Don’t worry, the kids will love it ! Guaranteed! You can mix it up and serve it in a wrap, with crackers, on on a sandwich.  Any way you serve it, it’s a hit!

Sweet and Crunchy Chicken Salad

  • 1 large can of chicken or 1 1/2 cups cooked chicken
  • 1/4 cup mayo
  • 1 cup diced red grapes
  • 1/4 cup chopped celery
  • 1/4 cup chopped pecans or walnuts

In a large bowl mix chicken and mayo.

Stir in the other ingredients and mix well.

I didn’t have any celery, but that’s ok cause I am not a big fan! Shhh…we won’t tell anyone else. :)

Refrigerate until ready to serve.

Serve in a wrap with lettuce, on a sandwich, or with crackers! YUM!

Fancy serving pictures tomorrow.  I have to wait till lunch time.  I can’t feed them chicken salad at 11 PM.  :)

Yum! My son loves chicken salad. I usually cook at least 3 pounds of chicken then store it in the freezer. I love pulling it out and letting it thaw so by the time we get ready to eat, it’s perfect.

I make chicken salad pretty much the same way, except I use raisins instead of the grapes. I also will add chopped celery leaves and a bit of shredded carrot (for a little color -and just another way to sneak in some veggies! LOL).

Oh what a great recipe! I’m always looking for ways to get creative with the kids lunches. I bet bits of apples in this would be great too. I can’t wait to see the rest of your lunch ideas. =)

I love making this! However I add a couple hard boiled eggs and a bit of shredded carrot if I have it. Yummy!
