Weekly Meal Deal: Tangy Shrimp & Spinach Salad

I feel like I am an old fuddy duddy anymore.  We don’t go out to eat anymore.  Yes, it saves a ton of money, but sometimes you just want that restaurant food!  You want not to have to cook, or clean, or worry if everyone has a drink.  It’s nice to let someone else do the worrying every once in a while! :)

Well, since I have been crowned Queen Worrier.  I figured I may as well have the restaurant food at home.  Applebees has this salad with Shrimp and spinach, with a Tomato Bacon dressing.  On the rare occasion we do go out,  this is what I like to get!  Or a steak….but on healthy days the salad. ;)

I have figured out how to make the same salad at home for next to nothing.  It is so good and healthy!  Perfect for those of you trying to stay slim in this world full of delicious treats!  This only takes minutes from the store to the table.  What a great way to impress a group of girlfriends with a fancy lunch!

My oldest daughter and I like to make it for dinner and then have a spa evening when the other two go to bed.  Have a little mani- pedi- session, and just have some girl talk.  It makes for a nice evening.

Tangy Shrimp and Spinach Salad

Tangy Shrimp and Spinach Salad Printable Version

  • Frozen or Fresh Peeled, deveined, tail off shrimp.  We like enough for about 8-12 shrimp per serving.  It’s really up to you!
  • 1 Bottle of Kraft Tangy Tomato Bacon Catalina Dressing (tastes just like the one at Applebees
  • Toasted almonds or pecans
  • Sliced red onion (optional)
  • Bacon bits
  • 1 Bag of Fresh Baby spinach

Directions

Toast nuts in 375 degree oven if needed.  Be careful not to burn.

In a skillet heat Sliced onion, shrimp, and about 1/4 cup of the Tomato Bacon Dressing.

Cook until shrimp are cooked through, about 5 minutes.  They will turn pink and curl up.

On a plate arrange the spinach leaves.  Pour 8-12 shrimp (depending on size) and some of the hot dressing over the spinach.

Top with toasted nuts, and bacon bits.  Add more dressing if desired!

Serve with a nice warm piece of French Bread.

  4. This recipe inspired me for dinner tonight. I ended up using my Sicilian Garlic Italian Kraft dressing since that is what I had in my fridge. And since I learned on Everyday Italian (you know, Giada’s show) that Italians like dried apricots in many dishes, I chopped some of those up as well. It turned our delish and was a perfect light summer dish. Thanks for the inspiration!
