Weekly Meal Deal: Creamed Chicken & Biscuits

A major time saver in my house is multitasking. I do it all the time, but I love when I can do it in the kitchen.  There is nothing more satisfying than knowing I have taken care of more than one meal at once, or at least the prep work for it.

I am really going to try hard, as we go into this busy time of the year, to post more multitasking recipes and more crockpot meals.  Especially since my new crockpot should be here tomorrow.  :) Today’s meal was a multitasking meal for me, but doesn’t have to be for you.

You see, I had some Chicken leg quarters in the freezer, and I had no idea what I was going to do with them.  Since it was so gloomy here today,  I was thinking of yummy things like biscuits, and nice warm you to your toes meals.  I have to pretend it is cold outside, cause it really doesn’t get cold here that often.  If I want to be in a seasonal mood, I kind of have to make it myself.

So, I tossed the chicken quarters in my big stock pot and made a huge batch of chicken stock…my house still smells all homey!  If you want to make some I posted it way back when.  You can find the instructions here.  When it was done I packaged it all up, and had a huge bowl of cooked chicken.  Now what?

Creamed Chicken and biscuits sounded like a winner to me.  Especially since I didn’t have to go to the store for anything.  I had all the ingredients right here.  Instead of my regular biscuits, I was so excited that I finally got to try the Gluten Free Bisquick Biscuits.  They are really good!  I think there may be one or 2 left around here but not many.

Creamed Chicken

  • 2 Cups Cooked Chicken (rotisserie or Chicken breasts works fine)
  • 1 Can of Cream of Chicken Soup
  • 1 cup of milk
  • Salt and Pepper to taste
  • peas (optional)
  • Biscuits or Rice to serve over

Directions

In a saucepan whisk together can of soup and milk over medium heat.

Add chicken, salt, and pepper.  Allow to heat and thicken.

Add some frozen peas (optional).  Spoon over fresh Biscuits or rice.

Before you ask, I know that only the 2 year old and I would eat the creamed chicken.  Being the short order cook I am, I reserved a couple cups of the chicken and cooked it with some BBQ sauce.  The kids had me put it on the biscuits like little mini sandwiches, and they ate them up!

So to review…One afternoon.  One Chicken.  2 meals, and a ton of Chicken Stock.  If that ‘s not multitasking, I don’t know what is.  I foresee some really good Chicken and dumplings in my future.

Weekly Meal Deal

This was a total stockpile meal for me.  I didn’t have to buy anything.  That is the best feeling!  If you don’t have any chicken on hand Publix has Chicken Drumsticks or Thighs, $1.29/lb this week (9/30 – 10/6) thanks I Heart Publix

You could totally make this meal for really cheap!  Not to mention that it is such a comforting, filling meal.

If you were to cook the chicken ahead or use rotisserie chicken, you could have this meal on the table in 15-20 min easy!
