Weekly Meal Deal: Nacho Mama Macaroni

This week has been crazy, but let’s be realistic, every week is crazy anymore!  This weeks meal deal is a good one.  It is an oldie at my house.  It even has a story. :)

Back in the days of one kid, and unknown food allergies, I was a normal stay at home mom who hadn’t been to the grocery store yet one week.  As I rummaged through the pantry to see what I had left for dinner I found, a box of macaroni and cheese, some salsa, tortilla chips, and I had some ground beef in the freezer.   Hmmm….I knew I could come up with something.

So, after a little of this, and a little of that my daughter and I came up with a winner.  We giggled and called it “Nacho Mama Macaroni”.   It doesn’t get made much anymore because only some of us can eat it, but it hasn’t been forgotten.  When my daughter saw it on the plate today she knew exactly what it was!

I love getting my kids involved in the kitchen.  They are memories that they will keep with them for a lifetime!

Nacho Mama Macaroni

Nacho Mama Macaroni Printable Version

  • 1 Box Kraft Macaroni and Cheese
  • 1 lb ground beef
  • 1 packet of taco seasoning
  • 1 can diced tomato with onion drained
  • Tortilla chips or Fritos for over the top

Directions

Cook macaroni according to package.

Cook ground beef and season with ground beef according to package.

In large skillet heat together taco meat, cooked macaroni, 1 can diced tomatoes (well drained) .

Heat together until well incorporated.

Top with broken tortilla chips and serve

**Gluten Free** You could use Gluten Free Mac and Cheese mix to make this and it would be just as good.  Be careful with the taco seasoning packs.  Some can contain gluten.

**Dairy Free** Believe it or not you could make this dairy free too.  They do sell dairy free mac and cheese.  It is just hard to find.

Plus, what I love about this meal is these are all stockpile items.  So, you could make this for much cheaper with items you have on hand from previous weeks!

My daughter is in 8th grade and made this in home-economics for a pasta cook off and won! No award but she is tickled pink. Just had to let you know. Thanks for all you do.
