To me a meal is easy and a deal when it has less than 5 ingredients. The simpler the better! I was busy with kids, and post office, and blog, and the dreaded laundry today. So, dinner was an afterthought.
This main dish could be turned into several meals that are sure to please everyone. This could even be put in the crockpot if you wanted. I wasn’t that prepared today, so it was an oven dish for me.
I love the flavors of citrus during the fall and winter! They really brighten up your mood with that little zing!
Once the chicken is cooked you can serve it with rice, or over a salad with some mandarin oranges, and pecans…YUM! Make extra and have enough for dinner one night, and some with a salad for lunch the next day! Perfect!
Honey Citrus Glazed Chicken Breasts
- 3 Bonless Skinless Chicken Breasts (1 3/4 lb) I recommend the tenderloins too!
- 1/2 cup Orange Juice
- 1/2 cup Honey
- 2 Tablespoons Lemon Juice
- Salt
- Pepper
Heat oven to 375 degrees. Grease Baking dish, and place chicken in dish.
Whisk together the Juice, honey, salt, and pepper; pour over chicken
Cover and bake 20 minutes; turn chicken…there would have been a picture but I burnt my hand in the turning process. Gotta love it when a little one runs for the open oven. I took the bullet instead.
Bake uncovered another 20 to 30 minutes longer or until juice of chicken is no longer pink when centers of thickest pieces are cut.
Serve with rice, or on a salad!
For those of you eyeballing those $0.59/lb turkeys at Publix. This marinade would be great on turkey too!
Meal Deal
I jumped away from the Publix sale this week just because I didn’t see anything for a great meal that stuck out to me. There are things I have done before, but let’s face it…you want something new to try.
Boneless Skinless Chicken is something I try to keep in my freezer. Depending on what grocery stores are available to you I think paying anything less than $2.30/lb is reasonable! I stock up when it goes on sale and put it in my freezer for dinners.
Rice is another thing that I haven’t had to buy in a while. I bought a huge 10 lb bag…it should come with a warning label that it could possibly last you forever. I think I paid $5-$6 for it on sale. It is a great easy, and gluten free side dish!
Veggies are yet another item I try to keep in my freezer at all times. It stock up when they are BOGO and pay next to nothing for them after coupon. Today just happened to be green beans.
All in all this meal today cost me the price of the chicken per serving because I had the other items on hand. If you had to go out and buy them today here is an estimate.
Chicken $2.30/lb =$4.60 (2 Lbs)
Orange Juice $1.50 (small bottle)
Honey $3 (small bottle)
Rice $1 (small package)
Veggies $1.50 frozen bag
The most this would cost would be $11.60
Divide by 4
That is $2.90 a person. Again, I didn’t pay that because I used my stockpile items. This is another great way to show that stockpiling your groceries really does pay off!

That looks delicious! I have a big bag of rice in our pantry, too. It really does last forever! And buying chicken in bulk and freezing it is the only way we buy chicken. Our local grocery stores usually have bulk meat sales and it is totally worth it. Thanks for the chicken inspiration!
Just came from a local citrus grove where I also bought local orange-blossom honey. Happen to have chicken in the fridge that needs used or frozen today. This meal was made for me!
