When I started A Few Short Cuts I wanted to share recipes to help you use the items you bought on sale.  I still strive to do that.  I am up for a challenge, and I think I may have found it.  GRAPEFRUIT!  I have a huge bowl…it began as 10 lbs to be exact.  It all started with a sale at Publix last week, and my love for grapefruit.

My eyes were bigger than my stomach.  I have had a grapefruit every morning for breakfast for a week now.  I have made a grapefruit salad dressing.  I found a recipe for Grapefruit Marmalade, which I am so trying this weekend.  Yet, I still have a bowl of grapefruit.  I just don’t understand why it doesn’t seem to be dwindling.

So, if you bought a bag…or 2 of grapefruit when it was on sale last week, I have a dessert recipe for you that will knock you socks off.  Grapefruit Pie.  It is so simple, creamy and tangy, that you will wonder why you didn’t make one sooner.

Grapefruit Pie

Grapefruit Pie Printable Version

  • · 1 Graham Cracker Crust
  • · 6 oz Grapefruit juice
  • · 1 can sweetened condensed milk
  • · 1 8 oz tub of cool whip
  • · 1 tsp grapefruit zest
  • · Sliced grapefruit for garnish

In a large bowl whisk together Grapefruit juice, milk, cool whip, and grapefruit zest.

Pour into Graham cracker crust.

Freeze for atleast 2 hours, preferably overnight.

Top with Grapefruit slices and serve.
