I am having Florida withdrawals, especially since the Strawberry festival started this week. What is the Strawberry Festival? It is a great little festival every year in Plant City Fl. Strawberries galore! Then comes u-pick Strawberries and more!
So in honor of my Florida roots, and my strawberry withdrawals this weeks Snackurday is my favorite Strawberry Pie!
Strawberry Pie

- 1 Graham Cracker Crust ( I made my own with GF Graham Crackers)
- 2 1/2 quarts fresh strawberries (more if you like to snack)
- 1 cup white sugar
- 2 tablespoons cornstarch
- 1 cup boiling water
- 1 (3 ounce) package strawberry flavored gelatin
In a saucepan, mix together the sugar and corn starch; make sure to whisk corn starch in completely.
Stir in boiling water, and cook over medium heat until mixture thickens.
Remove pot from heat. Add jell-o mix, and stir until smooth.
Let mixture cool to room temperature.
Wash and stem berries.
Position berries with points facing up in the graham cracker crust…this is also good if you use shortbread cookies to make the crust.
Pour cooled gel mixture over strawberries.
Refrigerate until set.
Serve with whipped cream, if desired.

I have been making this recipe for years! My Grandma gave it to me. My husband was not a fan of strawberries until I made this pie. I make my own crust, and either vanilla ice cream or redi-whip is very yummy!!!
Looks wonderful Amanda. I too am a Florida girl born and raised. I have since moved away, but still crave the delicious Plant City strawberries I used to buy by the flats. The Strawberry Festival is an awesome one and smells so good. My oldest son even won Grand Champion for his drafting project (blueprints of a turbine engine) at the festival, and won !st place for the same project in the Florida State Fair. Plant City strawberries are simply the best.
Amanda I will eat some of those lovely Plant City strawberries when we go and pay the festival a visit. Kinda hard not to when you live ten minutes or so from it
The Strawberry Festival Parade is today. My granddaughter, Reagan, is “Little Miss Plant City” ! I love strawberries and especially strawberry pizza, it has a thin layer of sugar cookie dough crust with crushed pecans baked for about 10 minutes in a pizza pan. Then spread a layer of cream cheese icing over it. Chill and then add a layer of strawberry glaze and lastly add sliced strawberries arrainged in a pretty pattern to top it off. Slice like a pizza and serve! Well gotta go watch the parade, it’s beautiful weather here today, 72 degrees right now and sunny, wish you could all be here to enjoy the Strawberry Festival and the weather!

We just found out our daughter has Celiac. She’s only 18 months so hasn’t had a lot of the yummy cakes, pies I thought she would miss out on. Thanks to this post I now have a new crust for my strawberry pie and we can all still enjoy it together!
