Weekly Meal Deal: Crockpot Mango Pork Chops & Spicy Black Bean Rice

The crockpot is my friend!  I really do love Hamilton.  How nice is it to dump ingredients in and then hours later have the smells of dinner wafting through the house?!  I just L-O-V-E it.  Especially since I feel like the Road Runner many days of the week. I am running in the door and out the door.  Taking someone to school or work, and then off to the store.  Then, I run right back in just to leave to pick someone up.

I am not shy about telling you I take shortcuts when I can.  This week is a prime example.  I found Spicy Mango Marinade at Target on clearance for a little over a $1.  It sounded so good for the pork chops I just picked up.  Ah Ha, Sounds like dinner.  It is so easy to throw some pork or chicken in the crockpot with your favorite marinade and have dinner in no time!  You could really choose any flavor.  I made this amazingly quick & easy Spicy Black Bean Rice to go with the pork chops.  Yay for a new side dish recipe!


Tips

  • Make the rice ahead or use a rice cooker.  This really cuts back on cooking time!
  • Gluten Free- make sure you read the marinade bottle carefully to make sure it is gluten free.
  • Serve with a side salad for a well balanced meal.
  • Try Making some of this Mango Sorbet for dessert!
