Coconut Easter Cupcakes

Coconut cakes

Oh I have the cutest idea, I just haven’t done it yet. LOL I just didn’t want to forget to share it with you!

Make these Coconut Cupcakes, but use food coloring to dye the coconut before you top the cupcakes.  I am thinking green or blue for grass.  Really any pastel colors.

Then Top with a peep.  It will be a cute little chick in a nest! If you aren’t crazy about peeps, use jelly beans and make them look like eggs in a nest.  I am going to get motivated and make these for around here for Easter.  I will update the picture as soon as I have one. :)

    Yummy!
    We make these and use a fluffy pipe cleaner or a twizzler for the Easter basket ‘handle’. It’s always a fun project for Easter week.
