Southern potato salad

I opened the fridge and saw this big bowl of hard boiled Easter Eggs looking back at me. Now, what to do with those little boogers.  I am not a big fan of eggs personally.  However, these are great for egg salad. My hubby may make a sandwich or two, but at our house we eat more potato salad.

This is a great easy and quick recipe for some delicious Southern Potato Salad.  This is great for a BBQ weekend or an everyday side dish.  You can whip up a batch in no time!

TIPS

  • This recipe is gluten free and dairy free
  • Make this a day ahead and keep it refrigerated until time to serve.
  • If you aren’t a fan of eggs you can leave them out of this recipe.

This recipe sounds great. Any tricks to prevent the salad from becoming watery? Seems like after the first day I have a pool of water at the bottom of the bowl. TIA

I make a potato salad similar to this. The only difference is I add bacon. It’s such a hit with my family I try to make it often when bacon goes on sale. It is the best!
