Weekly Meal Deal: Ham & Rigatoni Casserole

The store sales are a little slim this week.  But I have some ham leftover from Easter, and Pasta is always in my stockpile as a cheap/free item.  That makes this great dinner, super budget friendly!

This is Casserole is easy to make, filling, but light enough to serve when it is warm outside!  I love it!  It is one of my go to recipes after Easter and Christmas.  The 2 times of year when a ham has made an appearance on my table. Plus, you can prepare this ahead of time so all you have to do is pop it in the oven when you get home from a busy day!

Ham & Rigatoni Casserole

TIPS

  • Gluten Free- Use Gluten Free Pasta and GF White Pasta Sauce
  • Make this dish up to 24 hours in advance and refrigerate until ready to bake.
  • Serve this meal with a great fruit salad to keep a light dinner.
  • Make a loaf of Homemade French Bread to go with! SO GOOD!
