I am on a baked good kick. I love the smell of fresh baked goodies in the house. I sent a cake to work with my hubby today, that way I wasn’t the one consuming the calories. Baking to me is therapeutic. I love baking cakes, cookies, just desserts in general. Washing all the dishes is another story, but I love to bake.
This Blueberry Buckle recipe was in an old cookbook I was looking at the other day. I have adjusted it to be gluten free and dairy free if necessary, but it is a classic. It is like a Blueberry Muffin but in Cake form. Simply blissful with a cup of warm coffee in the morning.
TIPS
- Gluten Free- Use Gluten Free AP Flour mix and 1 tsp xanthum gum. Buckle pictured is actually gluten free.
- Dairy Free- Use Dairy free margarine or Butter flavored Crisco, and milk substitute.

- Dough will be thick when you mix it up. Don’t panic.

- If you use frozen blueberries like I did, expect a darker buckle due to the color of the batter changing.
