Tide You Over Tuesday: Grilled Corn with Flavored Butters

I am a corn lover from back in the day. I seriously have a picture that was published in the newspaper of me at 3 sitting on my dad’s shoulders eating an ear of corn. OH…it is one of the simpelist, juiciest, most delicious foods that God put on this earth. All you need is a little butter and salt to make your taste buds sing.

Today I am sharing my favorite way to eat corn. GRILLED! And some delicious recipes for flavored butters that will not only make your taste buds sing, but jump for joy.

Grilled Corn

8 Ears of corn (in husks)
Flavored Butter of your choice

Directions

Prepare grill or broiler.
Place corn on grill rack or broiler pan coated with cooking spray.
Cook 10 minutes, turning frequently.
Remove from heat; brush corn with butter mixture.

Asiago Cheese and Parsley Butter

Asiago Cheese & Parsley Butter Recipe

1/2 cup (1 stick) unsalted Butter, softened
1/4 cup grated Asiago Cheese (or parmesan)
2 tsps finely chopped parsley

Directions

Combine the butter, cheese and parsley in a small bowl and mash with a wooden spoon or the back of fork until blended.
Serve with corn or crusty bread
Can be refridgerated for up to 1 week

Chipotle Chile and Honey Butter

Chipotle Chile and Honey Butter Recipe

1/2 cup ( 1 stick) butter preferably salted, softened
2 tsps honey
1/2 tsp coarse salt
1 tsp chipotle chile in adobo sauce
1/2 tsp chili powder

Directions

Combine the butter, honey, salt, chipotle chile and chili powder in a small bowl and mash with a wooden spoon or the back of a fork until blended. Taste and adjust the seasoning if you would like it spicier.
Serve with Corn or your favorite rice.
Keeps in fridge up to 1 week covered.
