Weekly Meal Deal: Creamy Spinach Enchiladas

Cinco De Mayo is tomorrow and the perfect time to try this twist on a traditional Enchilada.  My family loves spinach dip, so I had a feeling this would be a hit with the spinach and cheese.  We are meat eaters and for my family to love a dish without meat is rare.  This was a huge hit!  You could add chicken to the filling, but it is not necessary.

These Creamy Spinach Enchiladas are creamy, filling, and delicious.  Serve them right out of the oven while the cheese is still hot and stringy! YUM!

Creamy Spinach Enchiladas

TIPS

  • Use corn tortillas for gluten free
  • Add chicken to the filling for a more hearty enchilada
  • Make ahead and freeze before baking. Pull out and thaw for a quick meal.
  • Make your own homemade Guacamole and Salsa to go with these enchiladas

Holy WOW these look and sound DELISH! We were planning on having a Taco Buffet for Mother’s Day…but I think you may have changed my mind ;)
