Summer is a time for fun, family, and food. Popsicles, Watermelon and ice cream are in abundance. Kids are running around barefoot in the sprinklers, and fireworks are on the horizon. This is the typical “Norman Rockwell” Summer picture.
Banana Splits are part of that picture, so rich, gooey and delicious. They include everything but the kitchen sink. These bars are reminiscent of that wonderful ice cream dessert. In fact they are perfect served with a bowl of Vanilla ice cream for the most decadent all American dessert!
TIPS
- You can grease the pan instead of lining it with foil. But I have found foil makes it much easier to clean up and remove bar cookies from the pan.
- You can make these gluten free by substituting an all purpose gluten free flour mix (like GF bisquick).
SIDENOTE
You may have noticed that my cherries were not as bright red like typical maraschino cherries. One of my Husband’s Co-workers made these homemade maraschino cherries and sent them home for us. Don’t they look fabulous?
They were really tasty! Much better than store bought.

Thank you for sharing this recipie with GF flour. Did you change the bake time or add any thing else? did you use GF bisquick or just GF flour?
Nancy, this time around I used Pamela’s GF Pancake and Baking mix. I did not change or add anything else and they came out great. Just make sure that when you are baking the cookie bottom to bake for the full 20 minutes, to make sure it gets baked through.
have you ever tried this with blueberries rather than the cherries? I have lots of blueberries right now, so think im going to try it! thank you for the recipes!
