“Snack”urday: Grilled Pineapple

This weeks “snack”urday is a House favorite.  While it isn’t necessarily a recipe with a ton of ingredients it is “oh so good!” You will wonder why you don’t make it all the time for dessert! I love grilled fruit and it is even better with the contrast of a nice cold scoop of vanilla ice cream!

Don’t be discouraged by purchasing a fresh pineapple.  Here are a few tips.

  • Smell the pineapple…the sweeter it smells, the sweeter it is likely to be.
  • Look for a firm pineapple.
  • Also look for a pineapple with a fresh looking  top.  You don’t want one with the green leaves shriveled or turning brown.

Slice the top off of the pineapple. Then run a sharp knife down the sides to remove the peel.

Cut the pineapple into even slices.  You may want to remove the core, but it is easier to grill with it intact.

I had my hubby throw the pineapple slices right on the hot grill grates when he was done grilled the chicken for dinner.  You want the pineapple to have the grill marks on both sides.  The heat brings the sugar to the surface and really brings out the flavor!

Serve with ice cream, or a slice of pound cake and whip cream! YUM!

BTW, you can also grill the pound cake while you’re at it. It gives it a nice, slightly crispy, coating to it. If you’re super daring, you could spread just a bit of butter on the pound cake first–yummy.

To make this just a touch more adult oriented, make bourbon glaze by melting butter and brown sugar together and adding bourbon to taste. While still warm, brush on the pineapple after you flip it the first time while the second side grills. Add to your ice cream and pour the warm syrup over like a sundae.

Wow! Fabulous tips for making this dish even more delicious – if that is even possible! I love finding nutritious snacks that not only are good for you, but taste great too.
