School is starting soon for some! My kids start back in a couple weeks. I know I am going to be really busy for the first few weeks trying to get back into the swing of things. So I am trying to make it easy on my self, and plan ahead. The best way for me to do that is get some meals in the freezer!
I like to make dinners that I can just double. Serve 1/2 for dinner, and put 1/2 in the freezer. Then one night when I am busy all I have to do is thaw and reheat! Some people like to take a day to just cook meals for the freezer. I am not that organized. I can admit that! So, making double meals works better for me.
Right now Bell Peppers are all over the place, and very reasonable. These Stuffed Bell Peppers are very simple to double and freeze! The other ingredients will be found in your stockpile, or are very easy on the budget. Purchase some aluminum toss away pans at the dollar store for your freezer meals. These are great for the freezer, and easy clean up!
