Cucumber Lunch Boats

I get so excited coming up with these fun lunchbox ideas every year.  My kids get a big kick out of it too! I love these Cucumber Lunch Boats because they are healthy, gluten free, fun, and just plain yummy! My son, Mason, helped my come up with this one. After I took the picture he said, “Oh Man! We should have stuck some pretzels in the side to look like cannons!” :) I love this kid. So, you can make your boat a pirate ship, sail boat, or other kind of boat with a little imagination.

All you are going to do is slice a cucumber in half long ways, and scoop out the seeds. I then cut them in half short ways to make them easier to handle for the kids.  You can fill them with tuna salad, chicken salad, hummus, whatever your kids like.  It is a great alternative to the typical lunch box food, and so much fun! You can also transform these into a great appetizer or party food. Just cut the cucumbers into smaller bites and serve on a tray.
