I know I keep saying it, but I can’t believe school starts in just a couple weeks. I am always looking for quick and easy lunch ideas for the kids, so I know you guys must be too! It brightens the kids day to have a special lunch to open up to. As some of you know my kids have food allergies. My oldest is allergic to milk while my son is allergic to wheat. School lunch isn’t an option for us, but they still love to have variety.
One of the hardest meals to accommodate is pizza. They see the other kids get excited about pizza day, but they get upset that they can’t join in. So, I decided to work hard to add it into their lunchboxes but make it simple so I can still get them packed quickly!
We just toast a hamburger bun in the toaster. I use Udi’s Gluten Free Buns for my son. Then I garnish them to each child’s liking. It is fun to play with the toppings. I have even put the toppings in little containers and let them assemble them at lunch before. THEY LOVE THAT. Since my daughter is allergic to dairy we finally found Daiya shredded cheese. She approves of the taste and says it is the best dairy free cheese out there.
I wasn’t sure about lunch box pizza at first but I have seen the pizza lunchables and this is so so much better. Plus just a fraction of the cost. My kids love it when it is pizza day at school, because they know they can enjoy it too!
