I live in the house of multiple dinners. My son is allergic to Wheat, my oldest daughter is allergic to dairy, and I just try to make something that every will/can eat. Pre-packaged foods basically don’t happen. The only time I buy a box of Nilla wafers is to satisfy one of my cravings, or to make a recipe for the blog…..which I then either give to a lucky neighbor, or my husband and I enjoy secretly after the kids go to bed. It is amazing that even though they know they can’t have it, the stares I get if I eat it in front of them are HORRIBLE! Like I have committed first degree murder. Kinda makes you not even want to eat any more…almost. 😉
I was bound and determined to make some gluten free dairy free Vanilla wafers. I knew it had to be done…so I could eat without having to go before a jury. I came up with this great recipe earlier and they turned out amazing! SIMPLY PERFECT! You can even make them with regular flour if you are not gluten free….but it is great to have options.
- ½ cup butter or margarine, softened
- 1 cup white sugar
- 1 egg
- 1 tablespoon vanilla extract
- 1⅓ cups Gluten Free Bisquick (or All Purpose flour)
- ¾ teaspoon baking powder
- ¼ teaspoon salt
- Preheat oven to 350 degrees F
- Beat butter and sugar in a mixing bowl with an electric mixer until light and fluffy; beat in egg and vanilla extract.
- Combine bisquick, baking powder, and salt in a bowl and mix the dry ingredients thoroughly into butter mixture.
- Drop cookies about 2 inches apart, 1 teaspoon at a time, onto parchment lined baking sheets.
- Bake at 350 F until edges of cookies are golden brown about 10 minutes.
- Cool cookies on baking sheet and then transfer on wire racks.
- Store in airtight container
- Use Dairy Free margarine or Butter Flavored Crisco
I am not one to be brand loyal…but the secret to my success for these is Betty Crocker Gluten Free Bisquick. Seriously one of the only gluten free flour mixes that doesn’t have a funny aftertaste. Totally worth it for me to make “normal” substitutes for my kids.
The dough for these is very basic. Almost just a sugar cookie dough with some extra vanilla extract. Make sure you are using a gluten free vanilla. Some are made with gluten containing alcohols.
These cookies need to be small…just like the boxed wafers. I took 1 tsp of dough and made them into small balls. Then place them on a parchment lined baking sheet and bake them at 350 degrees F for about 9 minutes. Keep an eye on them…everyones ovens are different and these can go from dough to burnt fairly quickly
You will want them to have this great golden color when the come out. Allow them to cool on the baking sheet for a few minutes before moving them to a cooling rack.
Store in an airtight container and enjoy! My kids faces lit up when I gave them each a small bowlful. Love at first bite.
