My garden has not been as fruitful as I would like this year. Maybe it is because I started it late, or possibly because I have seemingly been plagued with 14 different types of caterpillars. One thing that has overcome all of my bad luck….my Jalapeno Plant. I have had so many Jalapenos I decided to become creative with them.
On that rare occasion that we go out to eat, my Hubby always orders Jalapeno Poppers. I have made them from time to time, but they can be a bit of a pain. Inspiration struck earlier while making lunch and I whipped up this Jalapeno Popper Grilled Cheese. Of course he yells from the other room….”Add Bacon!” ~giggle~ These were such a WINNER! All I heard was “Mmm… Da-gum!” and “Will you make me another?”
- Texas Toast
- Jalapenos (seeded and sliced)
- spreadable cream cheese
- Crisp Cooked Bacon
- Monterrey Jack Cheese slices
- Assemble your sandwich by spreading the cream cheese on the texas toast, top with a slice of Monterrey jack cheese, 2 slices of bacon, and a few slices of jalapeno. Top with the other piece of texas toast.
- Cook in a skillet or in a sandwich press until both sides are toasted and the cheese inside begins to melt.
I gathered all of my ingredients. The Texas Toast for the bread is a must! YUM! The spreadable cream cheese will just make your life easier. So much simpler to spread this on the bread.
Layer everyone on the texas toast. Mine went something like cream cheese, Montery Jack slices, jalapenos (seeded), and bacon. Topped with the other slice of texas toast…smeared with just a little more cream cheese.
Toast this in a pan or sandwich press just like you would a regular grilled cheese.
What you end up with is a grown up grilled cheese that will win your way to any man’s heart.
