Healthy, quick, flavorful, and ready in just minutes! This Roasted Broccoli Quinoa Salad is all of those things and more! It wasn’t that long ago that I couldn’t even pronounce quinoa correctly, let alone know what it was. Now it is a staple in my house! This yummy grain is so filling and gluten free! It is full of fiber and protein making it an excellent choice for a filling side dish!
I love roasted broccoli on its own. It is so simple to throw a pan in the oven and roast it for a quick snack or even a side dish to an easy meal like rotisserie chicken. When you mix that roasted broccoli with this quinoa it really becomes a light meal on its own!
If you have never had quinoa, think of it to have a texture similar to rice, but more filling. The first time I had quinoa I had a bowl full and felt like I had just eaten a 10 course meal. If you are trying to diet or just eat healthier quinoa is a fantastic option.
That is why I love this salad! The full flavor of the roasted broccoli paired with the filling quinoa is so yummy! A must try!
- 1 cup quinoa
- 2 cups water or broth
- 2 heaping cups roasted broccoli
- 1 green onion, chopped
- 2 tablespoons olive oil
- Juice of 1 lemon
- Salt and black pepper, to taste
- Cook your quinoa first. In a medium saucepan, bring quinoa and water to a boil. Cover, reduce heat to low, and simmer until for 15 minutes, or until quinoa is tender. Remove from heat and let stand for 5 minutes, covered. Remove lid and fluff with a fork. Transfer quinoa to a large bowl.
- Add the roasted broccoli, and green onion to the quinoa. Drizzle with olive oil and fresh lemon juice. Gently stir. Season with salt and black pepper, to taste. Serve.
