<p>Tomorrow is a special day at my house.  It is the birthday of my #1 baby.  My little girl will be ELEVEN! It is so hard to believe! I asked her what type of cake she wanted, and I got the cutest response.  Since she has a dairy allergy she always walks by the bakery case and covets those delicious specialty cakes.  She said, “I want a chocolate strawberry cake  Not just a chocolate cake with strawberry icing, but a fancy cake with real strawberries and the gooey filling inside.”</p>
<p>So basically I had to become a pastry chef! I am always looking for short cuts and this is no different. These cupcakes have the gooey creamy center she wanted without a huge mess in my kitchen.   Here are the delicious Chocolate Covered Strawberry Cupcakes we made for her special day. It would be amazing to surprise a special someone with on Valentines day too!</p>

<li class="ingredient">1/2 cup white sugar</li>

<li class="ingredient">Fresh Strawberries</li>

<li class="instruction">Preheat the oven to 350 degrees F (175 degrees C), or to the temperature recommended on the cake mix package.</li>
<li class="instruction">Prepare chocolate cake mix according to package directions, but do not bake.</li>
<li class="instruction">In separate bowl cream together cream cheese, Jam and sugar until smooth. Beat in the egg until well blended.</li>
<li class="instruction">Line cupcake tins with cupcake papers. Fill 2/3 full with chocolate cake batter. Add 1 teaspoon cream cheese mixture to the center, and top with more cake batter.</li>
<li class="instruction">Bake according to package directions for cupcakes.</li>
<li class="instruction">Cool and frost with Vanilla or Cream Cheese Frosting.</li>

<p align="justify">It’s 3 PM and the kids come in from school looking for a snack.&#160; If you are like me you try to persuade them to eat the healthiest thing in the kitchen, but more often than not you are out voted for popcorn because of convenience and taste.&#160; What if you could both be happy?</p>
<p align="justify">Microwave popcorn is not the healthiest thing when purchased from the grocery store.&#160; It is full of chemicals, salt, fake butter, and calories, plus unless you have a coupon it isn’t cheap.&#160; Why is popcorn so expensive? </p>

<p align="justify"> I purchased a 2 pound bag of Popcorn kernels for $1.49.&#160; And I bought 50 brown paper bags for $1.00.&#160; So for $2.49 I am making 50 bags of microwave popcorn for my kids….and me.&#160; That is $0.05 per bag!&#160; </p>
<p align="justify">The added bonus is I know what they are eating, I know how much salt or other flavorings is being put on it,&#160; I know there are no chemicals, and everyone is still happy!</p>

<p>Voila!&#160; Season with salt, butter, popcorn seasoning …whatever your heart’s desire!</p>
<p>Now…wait a minute….I can hear you already saying, but the boxed stuff is in my pantry and ready to go.&#160; Well, this can be too!&#160; How?&#160; It is super easy!</p>

<p>Just fill the bags with the 1/3 cup popcorn kernels and fold over the top.&#160; Fold the bag just like the pre-boxed stuff and place it in a ziploc bag with directions.&#160; I used a pencil to write it right on the bag.&#160; Just remove from the ziploc, unfold, and microwave!</p>
<p>This is a job for my kids.&#160; We just take a Saturday morning some measuring cups and bags and go to town.&#160; They love doing it and having their snacks whenever they are hungry!</p>

<p>I was blown away by the response after I posted the <a title="Tide You Over Tuesday: Homemade Italian Dressing Mix" href="http://afewshortcuts.com/2012/01/tide-you-over-tuesday-homemade-italian-dressing-mix/">Italian Dressing Mix</a> Recipe last week.  You guys loved it and I had a ton of requests for a Ranch Dressing Mix Recipe.   I just so happen to have one for you guys that I use all of the time!</p>
<p>I love this because it is truly versatile!  Not only can you make your own ranch, you can make your own dip with it.  This is made in huge batches in a jar in my kitchen, because my daughter is allergic to milk and I refuse to pay $4-$5 for a bottle of dairy free ranch dressing.  This makes the best tasting dairy free ranch dressing and dip.  This is also great for those of you that are Vegan, and can’t have dairy for that reason.</p>

<li class="ingredient">2 cups diced or sliced carrots</li>
<li class="ingredient">1 cup diced celery</li>
<li class="ingredient">6 cloves garlic (I used 3 tbsp minced garlic)</li>
<li class="ingredient">6 – 8 cups of chicken broth</li>
<li class="ingredient">1/2 tsp Italian seasoning</li>
<li class="ingredient">1 tsp coarse sea salt</li>
</ul>

<li class="instruction">Soak your beans overnight. Drain and pick out the undesirables (i.e., discolored beans) in the morning.</li>
<li class="instruction">Use a 5- to 6- quart crockpot. (I used my 6-quart oval programmable crockpot.)</li>
<li class="instruction">Dice the veggies, and add them to the crockpot with the black-eyed peas that have been soaked and drained.</li>
<li class="instruction">Pour in broth, and stir in Italian seasoning and salt.</li>
<li class="instruction">Add ham bone. You can also add the sausage at this point.</li>
<li class="instruction">Cover and cook on low for 8 hours, or on high for about 6.</li>
<li class="instruction">About a half hour to an hour before serving,remove one cup of beans and puree with blender and return to slow cooker. Stir after pureeing.</li>
<li class="instruction">This will thicken the soup.</li>
<li class="instruction">Serve</li>

<li class="instruction">Preheat oven to 350 degrees F (175 degrees C).</li>
<li class="instruction">In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy.</li>
<li class="instruction">Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended.</li>
<li class="instruction">Mix in the chocolate chips</li>
<li class="instruction">Drop by rounded teaspoonfuls onto ungreased cookie sheets.</li>
<li class="instruction">Bake for 8 to 10 minutes in the preheated oven, or just until set.</li>

<p>Oh it is cold outside and I love the smell of crusty hot fresh bread.  Especially when it is coming out of my oven.   This <strong><a href="http://afewshortcuts.com/2010/03/tide-tuesday-homemade-french-bread/">french bread recipe</a></strong> is one of my favorites, not only is it easy, it is so delicious. People will wonder which bakery you bought it from.</p>
<p>I love turning it into garlic bread, <a href="http://afewshortcuts.com/2010/06/tide-tuesday-homemade-croutons/">croutons</a>, and just eating it with a little bit of butter.  This Tomato &amp; Basil Bruschetta is a great way to finish up the end of the season garden goodies.  Top it with a little bit of fresh mozzarella and I am in heaven.</p>

<li class="ingredient">6 or 7 ripe plum tomatoes (about 1 1/2 lbs) peeled, seeded,and chopped</li>
<li class="ingredient">2 cloves garlic, minced</li>
<li class="ingredient">1 Tbsp extra virgin olive oil</li>
<li class="ingredient">1 teaspoon balsamic vinegar</li>
<li class="ingredient">6-8 fresh basil leaves, chopped.</li>
<li class="ingredient">Salt and freshly ground black pepper to taste</li>
<li class="ingredient">1 baguette French bread or similar Italian bread</li>
<li class="ingredient">1/4 cup olive oil</li>

<li class="instruction">Make sure there is a top rack in place in your oven. Turn on the oven to 450°F to preheat.</li>
<li class="instruction">While the oven is heating, Put tomatoes, garlic, 1 Tbsp extra virgin olive oil, vinegar in a bowl and mix. Add the chopped basil. Add salt and pepper to taste.</li>
<li class="instruction">Slice the bread on a diagonal about 1/2 inch thick slices. Coat one side of each slice with olive oil using a pastry brush. Place on a cooking sheet, olive oil side down. You will want to toast them in the top rack in your oven, so you may need to do these in batches depending on the size of your oven. Once the oven has reached 450°F, place a tray of bread slices in the oven on the top rack. Toast for 5-6 minutes, until the bread just begins to turn golden brown.</li>
<li class="instruction">Align the bread on a serving platter, olive oil side up. Either place the tomato topping in a bowl separately with a spoon for people to serve themselves over the bread, or place some topping on each slice of bread and serve. If you top each slice with the tomatoes, do it right before serving or the bread may get soggy.</li>
<li class="instruction">Serves 6-10 as an appetizer. Or 3-4 for lunch. You may want to top with some fresh mozzarella cheese (optional)</li>

<p>I love Halloween, Fall, and all things Autumny.  However, you can ask anyone who really knows me, and they will tell you that my weakness this time of year is Candy Corn.  I can’t help myself.  I will buy one bag, cause who doesn’t buy at least one bag.  Then that first bag disappears…who knows where it goes.  And then there is another bag purchased.  Now, this has become worse since they have started releasing coupons for these honey sweet triangles. I have restrained myself the past 2 trips to the store and have not bought a bag….I promise!</p>
<p>So since I have been good, I decided to do my ode to candy corn this week and make candy corn cookies.  I typically make big cookies but these little candy corn cookies are a perfect snack size.  If you just want a quick nibble of something sweet these will do the trick.  Plus, they are so festive!</p>

<li class="instruction">Prepare the sugar cookie dough.</li>
<li class="instruction">Divide the Sugar Cookie dough into 1/3.</li>
<li class="instruction">Mix the cocoa powder into 1/3 of the dough</li>
<li class="instruction">Mix a few drops of orange coloring into the second third of the dough</li>
<li class="instruction">Leave the final third plain.</li>
<li class="instruction">Line a loaf pan with waxed paper.</li>
<li class="instruction">Begin to layer the cookie dough into the loaf pan by pressing in each color until it covers the bottom of the pan.</li>
<li class="instruction">Refrigerate for at least 2 hours. or if you are inpatient like me&#8230;freeze for 20 mins.</li>
<li class="instruction">Preheat oven to 350 degrees F.</li>
<li class="instruction">Remove dough from pan with waxed paper and slice into sections. Then cut each section into triangles.</li>
<li class="instruction">Place on a parchment lined cookie sheet and bake for 8-10 minutes or until golden.</li>

<li class="instruction">Salt and Pepper the chicken tenders. In a large skillet over medium-high heat, heat the oil. Add the chicken and cook, turning as necessary, until cooked through, about 5 minutes per side, depending on the thickness.</li>
<li class="instruction">Meanwhile, in a small bowl, combine the honey, hot red pepper sauce, cilantro, and lemon juice. Taste and adjust the ingredients as needed. You may want to use less hot sauce and add it to taste. If you use too much hot sauce right off the bat, you can add more honey and lemon juice to cut the spice.</li>

<p>My house is full of giggles this evening.  We are having a double sleepover.  My Daughter and Son happen to have friends that are Brother and Sister also.   It is a fun time and we have had an absolute blast so far.  Of course after we grilled Hot Dogs and Hamburgers we needed something sweet.</p>
<p>I went downstairs to dig around in my stockpile of sweet treats.  I pulled out a box of brownies, bag of marshmallows and a jar of peanut butter.  Oh…and then a helper grabbed some chocolate chips.  We knew that we were in for sugar overload, but it would be good.</p>
<p>My helpers and I came up with this gooey concoction that is decadently delicious and kid friendly!  You have to try this one!</p>

<li class="instruction">In a microwave safe container microwave peanut butter for 30 seconds on high. This will make it thin enough to pour. Drizzle peanut butter on top of marshmallows.</li>
<li class="instruction">Return to oven for 2-4 minutes or until marshmallows become soft and gooey over the top.</li>
<li class="instruction">Remove from oven and allow to cool before cutting.</li>

<p>I promised you guys my <strong><a href="http://momswithcrockpots.com/2011/10/apple-butter-crockpot/">crockpot apple butter recipe</a></strong> the other day!  After picking apples we have made so many different things that we have never made before.  This apple butter is by far one of my favorites because it can be canned and given as gifts for the holidays.</p>
<p>I also love the fact that you can adjust the sugar content to your families tastes.  I only used 1 cup of sugar because the apples we had were sweet enough on their own.  The added bonus of this delicious treat is the aroma that will waft through your house. LOVE THE SMELLS OF FALL!</p>
<p>Snag some fresh apples and toss them in your crockpot this weekend.  You will LOVE this recipe!</p>

<p>So I was on pinterest the other day and saw some caramel apple donuts.  I was hooked just by the picture.   My mom bought me a donut pan for my birthday and it has been sitting in the cabinet just waiting for the perfect recipe.   This was it.</p>
<p>Tonight I hit the kitchen and began to whip up what I thought was going to be a mind blowing breakfast.  Unfortunately the best made plans sometimes fail, and this was one of those times.  The donuts fell apart; just crumbled right out of the pan.</p>
<p>Since my kitchen was already a mess and had apples everywhere.  I hit the drawing board.  I started experimenting.  Why not dirty a couple more dishes? I came up with this delicious caramel apple cake that is moist, dense, and absolutely full of fall flavors.</p>

<li class="ingredient">1 cup shredded fresh apples</li>
<li class="ERSeparator">Caramel Sauce</li>
<li class="ingredient">1/2 cup apple cider</li>
<li class="ingredient">1 cup packed brown sugar</li>
<li class="ingredient">OR use Caramel Ice Cream topping</li>

<li class="instruction">Grease and flour 9&#215;9 baking dish.</li>
<li class="instruction">In a medium bowl stir together flour, baking powder and salt.</li>
<li class="instruction">In another medium bowl wisk eggs and brown sugar together.</li>
<li class="instruction">Stir in vanilla and vegetable oil.</li>
<li class="instruction">Mix egg mixture into flour mixture until batter forms.</li>
<li class="instruction">Stir in 1 cup shredded apples (peeled or peel on is fine)</li>
<li class="instruction">Pour batter into 9&#215;9 baking dish and bake at 350 degrees f for 25-30 minutes or until toothpick inserted into the center comes out clean.</li>
<li class="instruction">Pour caramel sauce over the cake. Cut and serve.</li>

<p>My youngest came into the kitchen just a little while ago and in her cute southern drawl said, “Oh Mama, what is that smell? Is it for me?” She made me grin from ear to ear.  The smells of Fall were oozing out of the oven.</p>
<p>It is only mid-September and I may freeze my buns off.  The Florida in me is apparently showing, because the high today was 55. There were kids wearing shorts to school.  While I, on the other hand, was in a sweatshirt and jeans. I may just die this Winter, but I am trying to make the best of the cooler temps by turning my oven on.</p>
<p>I found this Betty Crocker Molasses Cookie Pouch the other day and knew it had an amazing purpose in my kitchen.  I just had to dream it up.  What is more fall the Molasses &amp; Apples.  So with a little chopping and delicious idea, I threw these Autumn Apple Spice Bars together and they live up to my dream.  They are warm,  cakey, and perfect with a cup of coffee or hot cider.  I will be buying more Molasses Cookie Pouches!</p>

<li class="instruction">In a large bowl mix Oats, fruit, nuts, and Sunflower Seeds or coconut.</li>
<li class="instruction">In a small saucepan heat honey and oil until they form a syrup&#8230;about 2 minutes over medium heat. Remove from heat and mix in vanilla.</li>
<li class="instruction">Pour Honey Syrup over granola mix and stir to coat.</li>
<li class="instruction">Quickly spread granola over large baking sheet and bake at 325 degrees for 40 minutes. Stirring occasionally so it does not burn.</li>
<li class="instruction">Allow to cool on pan for 15-20 minutes and then break into pieces and store in an air tight container.</li>

<p>September is the usher of Fall.  When we lived in Florida Fall didn’t even think about beginning until almost November.  However now that we are in Iowa ,there is already a crispness to the air.  The afternoons seem calmer, and the hustle and bustle of Summer is fading away.  It will soon be time for Pumpkins, Corn Mazes, and Apple picking.  Spooky little ghosts looking for candy won’t be far behind.</p>
<p>A big sign of Fall, for me, has always been baking.  When the weather finally cools off enough so that turning the oven on isn’t oppressive.  Homemade bread, muffins, and cakes start to grace my cake plate.  And the smiling little faces run in the door to see what I have filled it with today.</p>
<p>Seeing that I am getting in the Fall mood, I am all about pumpkin this week.  These Pumpkin Cupcakes are UNBELIEVABLY moist and delicious!  They are the perfect start to a long season of baking!</p>

<p align="justify">I love feeding my kids a nice hot breakfast, but let’s be completely honest.  I am not a morning person.  I am not June Cleaver and I will not wake up at 5 AM just to put a hot breakfast on the table.  Most mornings it is cold cereal, granola bars, or microwave oatmeal on my table.  If my kids eat a hot breakfast, it is usually because I am cooking it for dinner.</p>
<p align="justify">Now this recipe is something that is right up my alley.  Baked oatmeal is not something that I had tried before, but it sounded delish and I was intrigued.  So I tweaked the recipe a bit for my family and whipped up a batch in less than 5 minutes.  Tossed it in the oven and my house smelled like a fresh pan of Oatmeal cookies.</p>
<p align="justify">My son is my pickiest eater and typically will not eat oatmeal, let me just say he ate this up and wanted seconds.  It is that good! So if you are looking for something nutritious to feed your little ones for breakfast but don’t want to get up early.  Bake a pan of this the night before. Heat it in the microwave with a little bit of milk and you have an amazing breakfast on the table in no time!</p>

<p align="justify">This is great for a movie night, slumber party, or to give as gifts during the holidays.  You can always make a batch just cause you want something chocolaty! You could even add nuts. Don&#8217;t wait another minute.  Run to the kitchen and make this now!  You won&#8217;t regret it!</p>
