Delightfully Easy TirimisuYou guys know I have a love of coffee that runs deep. I also love International Delight! It wasn’t that long ago that they came out with this delicious International Delight Iced Coffee. Now they have topped themselves and came out with this International Delight light Iced Coffee with 1/3 fewer calories! I love it!

International Delight Light Iced CoffeeMy biggest problem lately is finding a treat that I can indulge in while the kids are busy in the afternoon or in bed. I came up with this Delightfully Easy Tirimisu that is low on calories and can be whipped up in minutes!

Ingredients
  • 1 box vanilla wafers cookies
  • 1 small package sugar free vanilla pudding mix (4 serving size)
  • 1 8 oz tub cool whip
  • 1 cup International Delight Light Iced Coffee Mocha flavor
  • ½ cup skim milk
  • Cocoa powder for dusting
Instructions
  1. In a bowl wisk together the pudding mix, iced coffee, and skim milk. Place in fridge until pudding sets.
  2. In a 8x8 or 9x9 dish place a single layer of vanilla wafers.
  3. Place half of the pudding mix over the wafers, and cover with another single layer of vanilla wafers.
  4. Top with the other half of the pudding mix. Then cover with cool whip.
  5. Dust with some cocoa powder.
  6. Refrigerate or serve immediately.

  1. You can use gluten free cookies to make this gluten free.

Operation Christmas Child: How do you Give Back? #OCCGiving

The Holiday Season is approaching quickly.  My kids know that there will be presents under their tree this year. They know that there is a roof over their head, food to eat, and clothes on their backs. What about the children that aren’t certain of those things? It is difficult to imagine being in that place, and it is an even harder concept for my kids to grasp. I want my kids to grow up with a sense of gratitude and giving during the holidays.  I want them to know the real meaning of the season and what it truly stands for. We have done a lot of talking about doing more giving back this year. The kids are fully prepared to get a little less to give a little more, because my budget is still the same. They were all surprisingly for the idea!  All of my children are very compassionate and want to do all that they can.

We decided to take on a project that is the perfect size for my growing givers; Operation Christmas Child.  It is very simple and a great cause.

Here is How to Participate

  • 1. Use an empty shoe box (standard size, please) or a small plastic container. You can wrap the box (lid separately), but wrapping is not required.

  • 2. Boy or Girl? Determine whether your gift will be for a boy or a girl, and the child’s age category: 2-4, 5-9, or 10-14. You can download a label online or click the Follow Your Box option to get a special label to learn the destination of you shoe box gift.
  • 3. Fill it up! Fill the box with a variety of gifts that will bring delight to a child such as toys, school supplies, and hygiene items. A list of suggested gift items is available here.
  • 4. Donate $7 Please donate $7 or more for each shoe box you prepare to help cover shipping and other project costs. You can give online by using our Follow Your Box option, or you can write a check to Samaritan’s Purse (note “OCC” on memo line) and place it in an envelope on top of the gift items inside your box. If you or your family are preparing more than one shoe box, please make one combined donation.

013 This year I am enjoying Summer and have really been working on getting the backyard to be my own personal escape.  Since I am not the only person in the house, I have had to take bits and pieces from everyone’s backyard ideas. Half the fun is in the journey, so my backyard isn’t done yet, but I wanted to show you some of the key pieces that I already have! 005

Ahh…my chair! Well, it depends on who you ask, my husband says it is his chair. I just painted it last week with this great avocado colored paint.  I am officially in love with my new spot in the shade.  Especially my hanging flowers!

No back patio is complete with out a place to sit, and chat, and have a bbq of course! I love my little bistro set! I added a shelf for some of my potted flowers.  Can you tell I love flowers yet.

Now, if you ask my hubby this is his perfect addition to the backyard.  It is his pride and joy! Frankly, it is mine too during the hot summer months.  I don’t have to heat up the kitchen!

Then there is my greenery! I love all of my plants, herb garden, and tomato garden.  They make my yard feel so homey.

Then there is some fun I added for the kids.  I love these Leaning Flower Pot Planters and of course their super cool Kiddie Car Washthat has been keeping the kids very busy!
