<p>I love creative recipes that utilize items already in the pantry! With summer vacation almost here I am prepared to be knee deep in hot dogs, hamburger, and chicken nuggets. I got this recipe the other day from Pringles and wanted to share it with you.  It is totally flexible.  You could use another type of chip or even crushed pretzels as the breading for the chicken.</p>
<p>My kids love these <a title="Tide You Over Tuesday: Homemade Chicken Nuggets" href="http://afewshortcuts.com/2009/10/tide-you-over-tuesday-homemade-chicken-nuggets/">homemade chicken nuggets</a> that I use rice chex to make.  I usually make a huge batch a head of time and keep them in the freezer.  Not only are they healthier, but cheaper than store bought nuggets.</p>

<li class="ingredient">·2- 6.38-ounce cans of  Pringles (BBQ or Honey Mustard flavor)</li>
<li class="ingredient">·2 pounds of boneless chicken breast or chicken tenders, cut into 1 1/2” nuggets</li>
<li class="ingredient">·2 cups of skim milk or buttermilk</li>

<li class="instruction">Preheat oven to 400°F with a rack in the middle.</li>
<li class="instruction">Place nuggets in milk.</li>
<li class="instruction">Puree the Pringles in a food processor, and pour into a large sealable plastic bag. Place two or three nuggets at a time in the bag and shake to coat.</li>
<li class="instruction">Spray a cookie sheet with cooking spray, and place the well-coated nuggets in a single layer. Bake in the preheated oven for 20 minutes.</li>
<li class="instruction">Remove and let stand, uncovered, 5 to 10 minutes to crisp.</li>

<p>Necessity is the Mother of invention. We had big storms move through the Mid-West this weekend, and while we didn’t get hit by them we have had terrible winds.  The lovely winds knocked our power out Sunday, and about the time it came back on it went off all over most of the house.  After several calls, we discovered the wind knocked the line from the side of the house loose causing us to loose power to 2/3 of our house. The only problem is I have about 5 outlets that work, and none of them are really convenient.  The stove is out, so I am working with my griddle, and crockpot.  I am also trying to use what is in the fridge.  Lucky for me my hubby grilled some chicken the other day so I had that to work with.</p>
<p>I had a little helper in the kitchen today helping me make these.  It really tickled her to help me make the dressing to go on them.  She enjoyed eating them even more!</p>

<li class="instruction">Mix all of the patty ingredients together in a large bowl.</li>
<li class="instruction">Shape mix into patties and cook in a greased large skillet or on a griddle over medium heat. Cook the first side 3-4 minutes or until browned, flip and continue to cook 4-5 minutes or until cooked through.</li>
<li class="instruction">Serve on a plate or on a bun with Citrus Chili Mayo.</li>

<p>It has been awhile since I posted a dinner recipe, but this one is a winner!  I posted a great recipe for <a href="http://afewshortcuts.com/2012/03/creamy-mexicorn-risotto"><strong>Creamy Mexicorn Risotto</strong></a> Yesterday that was based on a recipe that green giant sent me.</p>
<p>I also happened to make this yummy<a href="http://momswithcrockpots.com/2012/03/citrus-chili-chicken-crock-pot"><strong> Citrus Chili Chicken</strong></a> in my crockpot at the same time.  So of course as I am standing in the kitchen looking at both of these dishes, I had the extreme urge to mix them together! Luckily I made plenty of chicken and had extra to make this casserole.</p>
<p>So as a great idea Make the Yummy <a href="http://momswithcrockpots.com/2012/03/citrus-chili-chicken-crock-pot">Citrus Chili Chicken </a>for tacos or burittos night one, and use the left over chicken to make this Mexicorn Chicken Casserole for meal 2!</p>

<li class="instruction">Using a fork, mash the garlic with 1/4 teaspoon salt in a small bowl to form a coarse paste.</li>
<li class="instruction">Whisk in 5 tablespoons oil.</li>
<li class="instruction">Add 6 tablespoons orange juice, vinegar and mustard; whisk until well blended.</li>
<li class="instruction">Taste and whisk in up to 4 tablespoons more juice to mellow the flavor; season with more salt, if desired.</li>
<li class="instruction">Set aside at room temperature.</li>

<p>I feel like a mess lately!  There just aren&#8217;t enough hours in the day to do it all.  I think I am running in so many directions that I just don&#8217;t have time to focus my energy on one thing for long.  So when I find a recipe for a quick, nutritious meal that I think my family will eat (<em>or atleast pick apart and eat pieces</em>) I am all over it.</p>
<p>This great Penne with Chicken &amp; Asparagus can be thrown together practically at any time.  Most of the ingredients come right out of your stockpile and make you life a little easier!  Try this one out! It is fabulous!</p>

<li class="ingredient">garlic powder to taste</li>
<li class="ingredient">1/2 cup low-sodium chicken broth</li>
<li class="ingredient">1 bunch slender asparagus spears, trimmed, cut on diagonal into 1-inch pieces</li>
<li class="ingredient">1 clove garlic, thinly sliced</li>
<li class="ingredient">1/4 cup Parmesan cheese</li>

<li class="instruction">Bring a large pot of lightly salted water to boil. Add pasta, and cook until al dente, about 8 to 10 minutes. Drain, and set aside.</li>
<li class="instruction">Warm 3 tablespoons olive oil in a large skillet over medium-high heat. Stir in chicken, and season with salt, pepper, and garlic powder. Cook until chicken is cooked through and browned, about 5 minutes. Remove chicken to paper towels.</li>
<li class="instruction">Pour chicken broth into the skillet. Then stir in asparagus, garlic, and a pinch more garlic powder, salt, and pepper. Cover, and steam until the asparagus is just tender, about 5 to 10 minutes. Return chicken to the skillet, and warm through.</li>
<li class="instruction">Stir chicken mixture into pasta, and mix well. Let sit about 5 minutes. Drizzle with 2 tablespoons olive oil, stir again, then sprinkle with Parmesan cheese.</li>

<p>I am always looking for kid friendly meals that will please the whole family.  Let’s admit, there are only so many times a year you can eat chicken nuggets without turning into one.   So I figured I would experiment in the kitchen this afternoon.   I started pulling out some easy ingredients for a chicken dressing that was so good, the little ones asked for seconds, and so did the hubby.</p>
<p>This meal is super easy, and affordable which helps it earn 5 stars in my book.  Plus, dinner was on the table in 30 minutes or less. Gotta love it!</p>

<li class="ingredient">Salt and freshly ground black pepper</li>
<li class="ingredient">1 tablespoon vegetable oil</li>
<li class="ingredient">8 tablespoons honey</li>
<li class="ingredient">Sprinkle of dried cilantro (cause I wanted to be fancy)</li>
<li class="ingredient">2 teaspoons hot pepper sauce, such as Tabasco or Crystal brand</li>
<li class="ingredient">1 teaspoon freshly squeezed lemon juice, or to taste (optional)</li>
</ul>

<li class="instruction">Salt and Pepper the chicken tenders. In a large skillet over medium-high heat, heat the oil. Add the chicken and cook, turning as necessary, until cooked through, about 5 minutes per side, depending on the thickness.</li>
<li class="instruction">Meanwhile, in a small bowl, combine the honey, hot red pepper sauce, cilantro, and lemon juice. Taste and adjust the ingredients as needed. You may want to use less hot sauce and add it to taste. If you use too much hot sauce right off the bat, you can add more honey and lemon juice to cut the spice.</li>
<li class="instruction">As you remove the chicken from the skillet dip it in the sauce before plating. You can also serve some of the sauce on the side for dipping.</li>

<p>I originally posted this recipe as a side dish on <a href="http://momswithcrockpots.com">Moms With Crockpots</a> the other day.  The thing is, I wanted to turn it into a meal.  It was so good as a side dish I knew it could be easily transformed into a dinner.  I added 2 cups of cooked diced chicken breasts, but you could add 1 lb of cooked ground beef (drained).  Either way it turns this crockpot side dish into an amazing crockpot meal.</p>
<p>My crockpot has been such a big time saver for me lately.  Between running people to and from school, homework, and the blog I just don&#8217;t have a ton of time to spend in the kitchen. If you are like me running in 10 different directions, try this dinner. It is a winner at my house!</p>

<p>There is nothing like a freezer full of low cost ingredients that make you come up with a recipe to use them.  I have been shopping at Target for most of my groceries since moving to Iowa.  They seem to have the best deals for my families needs.</p>
<p>Right now Target has Ore Ida Potatoes B2G1 plus there was a $1 Sweet Potato fries coupon a couple weeks ago.  When all is said and done you can get the Sweet Potato fries for $1 a bag.  If you haven’t tried these bad boys yet you should! They are delicious!</p>
<p>I had a great recipe for a sweet potato chicken casserole, that I changed up a bit to include the Sweet Potato fries instead of chunks of sweet potatoes. We had an impromptu movie day today and it made for a super quick supper!</p>
<p>That is the other thing that I love about this recipe, it can be thrown together in minutes.  If you precook your chicken, dice it and pop it in the freezer, it can be ready to go in minutes!  I love quick meals!</p>

<p>This salad is delicious by itself, or amazing with <a title="Tide You Over Tuesday: Homemade French Bread" href="http://afewshortcuts.com/2010/03/tide-tuesday-homemade-french-bread/">Homemade French Bread</a>.  I need to get in the kitchen and figure out how to make it Gluten Free because this is truly some amazing bread!</p>

<p>I am a cookbook collector. I used to just say I like reading cookbooks, but the stacks of them around the house now scream collector.  I started reading cookbooks to learn how to cook.  I had no clue what I was doing.  The first meal I made for my husband was spaghetti.  The second…Hamburger helper.  It is amazing he survived, but he is loving my cooking now.</p>
<p>Cookbooks gave me insight to something I knew nothing about. Well, very little. It always amazes and intrigues me that when you look at an old cookbook they include branded items, like Gold Medal flour, or Hershey’s Cocoa. These were basically advertisements for these companies, but they produced some amazing recipes. I have found some very odd product that I never even knew existed before.</p>
<p>Well, this recipe is not an advertisement, but a great recipe that I found for Chicken Pasta Primavera that takes minutes to make (you know I am all about shortcuts!).  It comes from Kraft, but can be tweaked to make it your own, and be a show stopper for dinner!  Plus, most of the ingredients are on sale at Target right now!</p>

<p>I am always looking for new twists on classic dishes.  Here at A Few ShortCuts I like to feature delicious, easy, Family friendly recipes.  I don’t want to be a short order cook and I know you don’t want to be either. I try to make all of my recipes something the entire family will enjoy digging into!</p>
<p>I knew I wanted to use my crockpot this week.  I am getting used to living in a house with a basement.  The downstairs is plum cold, while the upstairs gets hot enough for the ac while I am cooking.  I just don’t get it, but the only way I know to avoid using the oven for dinner is busting out Hamilton (my crockpot).</p>
<p>We love BBQ at my house!  This recipe makes some AMAZINGLY moist BBQ Chicken that is perfect for sandwiches, salads, or just by itself. I just wish crockpot food was more photogenic, because the picture does not do this recipe justice!</p>
<p><ul><strong>Crockpot BBCola Chicken</strong><li><blockquote><ul>
<li>5-6 boneless skinless chicken breast</li>
<li>1 can of cola</li>
<li>1 16 oz bottle of BBQ Sauce</li>
<li>1/2 cup chopped onion</li>
</ul>

<p>Ever had one of THOSE days?! Of course you have.  We all have!  Today was one of THOSE days for me.  No matter how you plan, or what intentions you have….it just doesn’t go your way.</p>
<p>When you have a day like that you don’t want to spend forever in the kitchen. The last thing I want to do is step in the kitchen, but I have no choice.  I stopped by Target for a rotisserie chicken.  They have the best and they are only $4.99.  You can also find the rotisserie chickens in the cooler at the deli. They are great to help you prep meals fast.</p>
<p>Although my family is happy with just he chicken, it is fun to get creative!  So, we are taking a shortcut and taking that rotisserie chicken and turning it into a BBQ Chicken Pizza.</p>
<p><li>Shortcut BBQ Chicken Pizza<blockquote><ul>
<li>2 cups cooked diced chicken </li>
<li>1 cup BBQ Sauce</li>
<li>1 prebaked pizza crust or <a href="http://afewshortcuts.com/2010/03/weekly-meal-deal-homemade-pizza/">Make your own</a></li>
<li>1-2 cups shredded mozerella (depending on how cheesy you like)</li>
<li>1 cup thinly sliced red onion</li>
<li>1/2 bunch fresh cilantro</li>
</ul>
Directions<br /><br />

<li>Preheat oven to 425 degrees F</li>
<li>In a bowl mix together your favorite BBQ Sauce and the chicken.</li>
<li>Spread over the prebaked pizza crust</li>
<li>Top with mozerella cheese and onion</li>
<li>Bake for 15 to 20 minutes or until cheese is melted and bubbly!</li>
<li>Top with fresh cilantro.</li>

<p>This weeks meal deal is an affordable, stockpile meal that can be made when you have 30 minutes or less to get dinner on the table.</p>

<li>Spray a 10-inch skillet with  the cooking spray and heat over medium-high heat for 1 minute. &nbsp;Add the  chicken and cook for 15 minutes or until well browned and cooked  through, stirring often.</li>
<li>In a bowl stir together the celery soup, mushroom soup, garlic salt, onion powder,&amp; pepperSpray a 3-quart shallow baking dish  with the cooking spray.&nbsp; </li>

<p>Ok,  I am going to show my girly side for a minute.  I know something big is going on in the world of Basketball right now.  I am not exactly sure what.  Some sort of playoffs I guess.  All I know is that we needed man food and fast.</p>
<p>This weeks Tide You Over Tuesday puts those free/cheap crackers and other cheap groceries to use! This dip is delicious and would be perfect at any party or get together this Spring!  Plus, it is easy!  Who doesn’t love something that you can just throw in the crockpot?</p>

<p><li>Buffalo Chicken Dip<blockquote><ul>
<li class="plaincharacterwrap"> 2 (10 ounce) cans chunk chicken, drained</li>
<li class="plaincharacterwrap"> 2 (8 ounce) packages cream cheese, softened</li>
<li class="plaincharacterwrap"> 1 cup Ranch dressing</li>
<li class="plaincharacterwrap"> 3/4 cup hot sauce (like Tabasco) </li>
<li class="plaincharacterwrap"> 1 1/2 cups shredded Cheddar cheese</li>
<li class="plaincharacterwrap">1 bunch celery, cleaned and cut into 4 inch pieces (optional)</li>
<li class="plaincharacterwrap">1 box of crackers or chips</li>
</ul>
<h3>Directions</h3>

<li><span class="plaincharacterwrap break">Heat chicken and hot sauce in a  skillet over medium heat, until heated through. <br /></span></li>
<li><span class="plaincharacterwrap break">Stir in cream cheese and  ranch dressing. Cook, stirring until well blended and warm. <br /></span></li>
<li><span class="plaincharacterwrap break">Mix in half  of the shredded cheese, and scoop the mixture into a slow cooker. <br /></span></li>
<li><span class="plaincharacterwrap break">Sprinkle the remaining cheese over the top, cover, and cook on Low  setting until hot and bubbly. <br /></span></li>
<li><span class="plaincharacterwrap break">Serve with celery sticks and crackers. </span></li>

<h3>TIPS</h3>
<ul>
<li>Get this dip started the night before and just refrigerate until about an hour before the party.  Pop it in the crockpot and you are good to go!</li>
<li>Gluten Free-  You can use gluten free crackers or those new Food Should Taste Good Chips, but check the labels on the ranch dressings.  They may contain wheat.</li>
<li>This would even make a great spread for sandwiches!  Hey it’s a 2 for 1!</li>

<p>The New Year Resolution that I am trying to make is stepping out of my comfort zone.  Many of us don’t like to step out of our comfort zones, because that is what we are comfortable with.  I find myself in ruts with food, life, etc.  I am trying to try a few new foods, and make an effort to taste things I wouldn’t normally try. This meal is one of them.</p>
<p>A while back I was watching TV and Rachel Ray made a version of this Spicy Peanut Chicken.  I didn’t turn my nose up at it, but I wasn’t compelled to make it either.  It just wasn’t anything I wanted to try.  When I saw the sale at Publix this week, I knew that this Spicy Peanut Chicken would fit perfectly. So, I made it.  I surprised myself.  It was really good!  Not something I would have picked,  but it is savory and filling!</p>

<h2><span style="text-decoration: underline;">Spicy Peanut Chicken</span></h2>

<li>· 1 ½ lb Boneless Chicken, cut into bite sized pieces</li>
<li>· 3 TBSP Vegetable oil</li>
<li>· 1 Bell Pepper diced into ½ inch pieces</li>
<li>· Salt &amp; Pepper</li>
<li>· 1 TBSP Ginger</li>
<li>· 4 cloves of Garlic, minced</li>
<li>· ¼ cup creamy peanut butter</li>
<li>· ¼ cup soy sauce</li>
<li>· ½ cup chicken stock</li>
<li>· 1 TBSP Chili Powder (+/-)</li>
<li>· 1 cup unsalted dry roast peanuts</li>
<li>· Water chesnuts or scallions, chopped (optional)</li>
</ul>
<p>Heat a tablespoon of vegetable oil over high heat in a large skillet. Add the chicken and stir fry for 2-3 minutes, then add the bell pepper and stir fry for 2 minutes more.</p>

<p>Remove the chicken and pepper to a plate and add 2 Tablespoons more oil to the pan. Add Ginger and Garlic and stir fry for 15 seconds, then add in the peanut butter, soy sauce, chicken stock, chili powder and stir to combine into a sauce.</p>

<p>Add the water chestnuts and scallions if you desire and toss for 1 minute, then add the chicken and peppers back to the pan with the peanuts and turn to coast in the sauce.</p>

<p>Here is my Quick Balsamic Chicken Recipe!</p>
<h3><span style="text-decoration: underline;"><span style="font-weight: bold;">Quick Balsamic Chicken</span></span></h3>

<li>3 Chicken breasts (about 1.5 lb)</li>
<li>1 Bottle Balsamic Vinaigrette Dressing</li>
</ul>
<p>Preheat oven to 375 degrees.</p>
<p>Cut each chicken breast in half, so they cook faster and are the proper size.</p>

<p>I served this with some pasta, and made a quick sauce with some diced tomato, olive oil, and garlic salt.  I topped it with some shredded mozzarella.  I added a side salad, and dinner was ready!</p>

<p>I was going to make this yesterday, but by the time I hit the store and came home I didn’t have enough time to get it in the crockpot.  Everything happens for a reason.  Today I had plenty of time to get this meal ready and not feel rushed.</p>
<p>I new that the idea of Praline Chicken sounded good, but I had no idea just how wonderful this would turn out.  I honestly think that this is one of the best meals I have ever made from scratch.  Seriously!  After making it I thought to myself, “This could be served at a gourmet bistro, and it came out of my crockpot!”</p>
<p>I served it on top of baby spinach greens, but you could put this over rice, couscous, whatever floats your boat.  For an added bonus I made a batch of sweet potato fries and included the recipe too!</p>
<p>What shocked me was that my picky 6 year old son not only tried it, but ate every last morsel of food on his plate.   I didn’t give him spinach, but he ate the chicken and the sweet potato fries.  That is saying something right there.</p>
<p>This is a keeper at my house.  It will be added to the regular rotation of meals!  Give it a try and let me know what you think!</p>
<p>I love that it is gluten free and dairy free,  no changes were necessary!</p>

<li>2 tbsp brown sugar</li>
<li>1 cup chopped pecans</li>

<p>Toss Chicken breast chunks with creole seasoning.</p>
<p>In a large skillet heat oil over medium heat.  Brown Chicken on all sides.  It doesn’t need to be cooked through.</p>

<p>Not only is this meal delicious but economical too!  Chicken breasts are on sale $1.99/lb this week at Publix!  Here is the cost breakdown.  I made this for much cheaper because I had items in my stockpile.  I only had to purchase the salad.  I had everything else on hand!</p>
<p><strong>2lb Boneless Skinless Chicken Breasts $1.99/lb = $3.98</strong></p>
<p><strong>Pecans approx $3.50</strong></p>
<p><strong>Pancake Syrup approx $2.50</strong></p>
<p><strong>Sweet Potatoes approx $0.50/lb ($2)</strong></p>
<p><strong>Salad Blend approx $2.25</strong></p>
<p><strong>Total= $14.23</strong></p>
<p><strong><em>Divide by 6 Servings</em></strong></p>
