Summer vacation is here and the kids are having all kind of sweet treats: Ice Cream, floats, shakes, and popsicles. I love stealing a treat with them from time to time, but I wanted some treats of my own! So I made these Caramel Mocha Iced Coffee Popsicles.

These are so simple! I got my popsicle maker  (which I am pretty sure is the best ever), strong coffee, and my International Delight of course. You can pick your favorite ID flavor. Plus, mini chocolate chips (not pictured). After I started I decided these needed chocolate. :)

I chose Vanilla Caramel Creme this time, but there are several yummy International Delight Flavors that would be amazing in these. I love the new International Delight logo. Look for it when you go to the store. I have seen it on a couple flavors so far. I love the new packaging!

Mix 3 cups of strong coffee with 1 cup of International Delight Creamer and fill your popsicle molds. If you are like me, you should have just enough left to pour into a glass for a nice iced coffee! Now, is when you sprinkle a few mini chocolate chips into each one because….they just needed some.

Now put the sticks in and freeze. I did this overnight to make sure they were good and frozen. These make the perfect treat for those hot summer afternoons!

Ingredients
  • 3 cups strong brewed coffee
  • 1 cup International Delight Vanilla Caramel Creme Creamer
  • ½ cup mini chocolate chips
Instructions
  1. Mix together the coffee and International Delight Creamer.
  2. Pour into a popsicle mold.
  3. Drop a few mini chocolate chips into each popsicle. Place sticks and freeze overnight.
  4. Enjoy

My secret ingredient. International Delight French Vanilla Creamer. It is always in my fridge for my morning cup of coffee. Well, at least one of International Delight’s amazing flavors is! This French Vanilla adds the best flavor to this dip. I have also made it with the White Chocolate Raspberry flavor. Equally AMAZING!

  • 1 8oz Package of Softened Cream Cheese
  • 1 7oz tub of Marshmallow Fluff
  • 2 Tbsp International Delight French Vanilla Creamer
Instructions
  1. In a medium mixing bowl beat together softened cream cheese, marshmallow fluff, and creamer until smooth.
  2. Serve with berries or cake cubes.
  3. Refrigerate unused dip until ready to enjoy.

Pair the dip with a platter of fresh cut fruit, or make this fruit kabobs with berries and angel food cake cubes. They are perfect with the dip too. I don’t think there is too much that wouldn’t taste FABULOUS with this dip!

Summer time at my house is full of treats. The kids are enjoying popsicles, ice cream, snow cones, etc, but what about mom? I enjoy an iced coffee or steal one of the kids popsicles, but I decided to make a treat just for me. This Iced Coffee Float Recipe will knock your socks off! Did I mention it is super easy to make?’

Just brew an extra cup of your favorite coffee. I choose a stronger brew than I typically drink and popped it in the fridge to cool. When it was chilled I placed a single scoop of vanilla ice cream in the glass. I topped it off with the chilled coffee, and a couple tablespoons of the new International Delight ColdStone Creamery Founders Favorite (Brownie Sundae)Creamer over the top. Then I drizzled some homemade chocolate syrup and sprinkles. Everybody loves sprinkles!  YUM!

Delightfully Glazed Gluten Free Doughnut HolesAsk anyone at my house what is one food that we miss having for breakfast since my son as diagnosed with a wheat allergy. The answer would be a unanimous “DOUGHNUTS”. They sell gluten free doughnuts in the freezer section but they just aren’t the same as those piping hot fresh fried doughnuts that you can get from the bakery. I hit the kitchen with the task of recreating these little bits of heaven.

I swear the kids all gathered around me and starred like I was making magic on the stove. They waited very impatiently for them to fry. “Are they done now?” They didn’t even want to wait for me to glaze them, to me the glaze was one of the best parts. I made it with my favorite creamer, International Delight Coldstone Sweet Cream. These turned out even better than I imagined. My son was giddy like Christmas morning.

I even made some regular donut holes by frying some canned biscuit dough and then dipped them in the ID Sweet Cream Glaze that I made. OH MY WORD! My husbands exact words. We should always have a can of biscuit dough and ID creamer in the fridge just in case. I completely agree!

Delightfully Glazed Gluten Free Doughnut Holes

Ingredients
  • Vegetable oil for frying
  • 1¼ cups Gluten Free Pancake Mix
  • ¼ cup packed brown sugar
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons oil
  • ⅓ cup buttermilk
  • 1 egg, beaten
Glaze
  • 2 Cups Powdered Sugar
  • 2 Tbsp International Delight Sweet Cream Creamer (Or other flavor)
Instructions
  1. In deep fryer or 2-quart heavy saucepan, heat 2 to 3 inches oil to 375°F.
  2. In medium bowl, mix ingredients together to form dough.
  3. Shape dough into 1 inch balls and carefully drop balls, 5 or 6 at a time, into hot oil. Fry about 1 to 2 minutes or until golden brown on all sides; drain on paper towels. Immediately roll in glaze. Serve
Glaze
  1. Whisk together the powdered sugar and creamer until glaze forms. Drizzle on the doughnut holes or dunk doughnut holes into the glaze.
Dairy Free
  1. Use ⅓ cup of your favorite milk substitute and 1 tsp vinegar for a buttermilk substitute.

These are so easy. Just heat the oil to 375 and mix up the dough.

Drop them into the hot oil and let them do their thing for about 2 minutes, or until golden brown

Then I broke out the creamer and the powdered sugar to whip up the glaze. You can use your favorite flavor, I chose this Cold Stone Sweet Cream because it is my favorite. Just whisk the powdered sugar and the creamer together.

I pulled the donuts out of the oil and let them cool for a second on some paper towels to absorb the extra oil.

Ingredients
  • 1 box vanilla wafers cookies
  • 1 small package sugar free vanilla pudding mix (4 serving size)
  • 1 8 oz tub cool whip
  • 1 cup International Delight Light Iced Coffee Mocha flavor
  • ½ cup skim milk
  • Cocoa powder for dusting
Instructions
  1. In a bowl wisk together the pudding mix, iced coffee, and skim milk. Place in fridge until pudding sets.
  2. In a 8x8 or 9x9 dish place a single layer of vanilla wafers.
  3. Place half of the pudding mix over the wafers, and cover with another single layer of vanilla wafers.
  4. Top with the other half of the pudding mix. Then cover with cool whip.
  5. Dust with some cocoa powder.
  6. Refrigerate or serve immediately.
Gluten Free
  1. You can use gluten free cookies to make this gluten free.

Raspberry Mocha Brownie Delight

Oh when it comes to desserts I have a soft spot in my heart.  Chocolate makes my heart skip a beat. You add that with my second love coffee and you had me at hello. I have had this dessert floating around in my brain for weeks but just didn’t have the ingredients to make it come to life. Today I fixed that problem with a trip to the grocery store and I am so glad I did.  Plus I needed some more International Delight Iced Mocha Coffee. That stuff just rocks! This dessert is so easy.  I took the lazy moms way out and bought pre-made brownies. I don’t do that often buy Udi’s makes gluten free brownie bites that I have been dying to try.

You can throw this dessert together in a matter of minutes to wow any crowd.

Raspberry Mocha Brownie Delight

Ingredients
  • 1 pan of brownies or about 3 cups of brownie bites
  • ½ cup International Delight Mocha Iced Coffee
  • ½ cup Raspberry Preserves
  • ¼ cup White Chocolate Chips
  • 6 oz fresh raspberries
Instructions
  1. Crumble and layer ½ of the brownies in an 8x8 pan.
  2. Drizzle ¼ cup iced coffee over the brownies. Sprinkle chocolate chips and half of the raspberries over the brownies, and drizzle ¼ cup raspberry preserves over them. You can microwave preserves for 20 seconds to help them spread easily.
  3. Continue with another layer of brownie pieces, the other ¼ cup International Delight Iced coffee, and ¼ cup raspberry preserves.
  4. Refrigerate until ready to serve.
  5. Serve with whipped cream or ice cream and more fresh berries.
Notes
You can use gluten free brownies to make this dessert gluten free.
