<p>I was blown away by the response after I posted the <a title="Tide You Over Tuesday: Homemade Italian Dressing Mix" href="http://afewshortcuts.com/2012/01/tide-you-over-tuesday-homemade-italian-dressing-mix/">Italian Dressing Mix</a> Recipe last week.  You guys loved it and I had a ton of requests for a Ranch Dressing Mix Recipe.   I just so happen to have one for you guys that I use all of the time!</p>
<p>I love this because it is truly versatile!  Not only can you make your own ranch, you can make your own dip with it.  This is made in huge batches in a jar in my kitchen, because my daughter is allergic to milk and I refuse to pay $4-$5 for a bottle of dairy free ranch dressing.  This makes the best tasting dairy free ranch dressing and dip.  This is also great for those of you that are Vegan, and can’t have dairy for that reason.</p>

<p>After all that hustle and bustle comes valentine’s day and if you are planning a romantic night in, this is a fantastic recipe for a special appetizer treat.  If you are watching your waist band, you can replace the pork sausage with turkey sausage to cut the fat and calories. You can even make the filling ahead and keep in in the freezer.  Just pull out and thaw, stuff the mushrooms, and pop them in the oven. Makes the whole process much faster!</p>
<p>These tasty little morsels, are surprising low in calories and full of healthy ingredients.  I don’t feel the least bit guilty for eating a couple of them when they popped out of the oven.  I mean look at them, you try to resist stealing one!</p>

<li class="ingredient">1/2 cup shredded asiago or Italian cheese mix</li>
<li class="ingredient">1/4 tsp garlic salt or garlic powder</li>
<li class="ingredient">1 tsp olive oil</li>

<li class="instruction">Preheat oven to 350 degrees F</li>
<li class="instruction">in a skillet brown italian sausage</li>
<li class="instruction">While sausage is browning defrost spinach and drain liquid from it.</li>
<li class="instruction">Place browned sausage, spinach, bread crumbs, seasonings, 1 tsp olive oil, and 1/4 cup cheese in a mixing bowl and stir together</li>
<li class="instruction">Clean and Remove stems from Mushrooms.</li>
<li class="instruction">Fill each mushroom cap with filling.</li>
<li class="instruction">Place in a baking dish and drizzle with a small amount of olive oil. Top with the rest of the shredded cheese and bake for 20 minutes or until cheese is bubbly and mushrooms are softened.</li>

<li class="instruction">Add 6 tablespoons orange juice, vinegar and mustard; whisk until well blended.</li>

<li class="ingredient">2 cups diced or sliced carrots</li>
<li class="ingredient">1 cup diced celery</li>
<li class="ingredient">6 cloves garlic (I used 3 tbsp minced garlic)</li>
<li class="ingredient">6 – 8 cups of chicken broth</li>
<li class="ingredient">1/2 tsp Italian seasoning</li>
<li class="ingredient">1 tsp coarse sea salt</li>

<li class="instruction">Soak your beans overnight. Drain and pick out the undesirables (i.e., discolored beans) in the morning.</li>
<li class="instruction">Use a 5- to 6- quart crockpot. (I used my 6-quart oval programmable crockpot.)</li>
<li class="instruction">Dice the veggies, and add them to the crockpot with the black-eyed peas that have been soaked and drained.</li>
<li class="instruction">Pour in broth, and stir in Italian seasoning and salt.</li>
<li class="instruction">Add ham bone. You can also add the sausage at this point.</li>
<li class="instruction">Cover and cook on low for 8 hours, or on high for about 6.</li>
<li class="instruction">About a half hour to an hour before serving,remove one cup of beans and puree with blender and return to slow cooker. Stir after pureeing.</li>
<li class="instruction">This will thicken the soup.</li>
<li class="instruction">Serve</li>

<li class="ingredient">1 can (16 ounces) cranberry sauce, jellied or whole cranberry sauce</li>
<li class="ingredient">12 ounces chili sauce</li>
<li class="ingredient">1 tablespoon brown sugar, firmly packed</li>
<li class="ingredient">2 teaspoons lemon juice</li>
</ul>

<li class="instruction">In a large bowl, combine ground beef, corn flake crumbs, parsley, eggs, ketchup, onion, soy sauce, garlic powder and pepper.</li>
<li class="instruction">Blend ingredients well and form into small balls, about 3/4-inch in diameter. Place in a casserole or baking pan. Preheat oven to 300°.</li>
<li class="instruction">Combine cranberry sauce, chili sauce, brown sugar, and lemon juice in a saucepan. Cook, stirring, over medium heat until mixture is blended.</li>
<li class="instruction">Pour hot sauce over meatballs in casserole. Bake for about 45 minutes, depending on the size of the meatballs. Transfer to crockpot and keep on LOW for serving.</li>
<li class="instruction">Makes 4 to 5 dozen meatballs, depending on size.</li>

<p>I found this recipe for Denver Style Morning Burritos on Krafts website and it sounded like it would use up just the right ingredients out of my fridge.  My hubby loves breakfast burritos so this immediately got 2 thumbs up from him. Check out how easy this delicious breakfast option is!</p>

People will wonder which bakery you bought it from.</p>
<p>I love turning it into garlic bread, <a href="http://afewshortcuts.com/2010/06/tide-tuesday-homemade-croutons/">croutons</a>, and just eating it with a little bit of butter.  This Tomato &amp; Basil Bruschetta is a great way to finish up the end of the season garden goodies.  Top it with a little bit of fresh mozzarella and I am in heaven.</p>

<li class="ingredient">6 or 7 ripe plum tomatoes (about 1 1/2 lbs) peeled, seeded,and chopped</li>
<li class="ingredient">2 cloves garlic, minced</li>
<li class="ingredient">1 Tbsp extra virgin olive oil</li>
<li class="ingredient">1 teaspoon balsamic vinegar</li>
<li class="ingredient">6-8 fresh basil leaves, chopped.</li>
<li class="ingredient">Salt and freshly ground black pepper to taste</li>
<li class="ingredient">1 baguette French bread or similar Italian bread</li>
<li class="ingredient">1/4 cup olive oil</li>

<ol>
<li class="instruction">Make sure there is a top rack in place in your oven. Turn on the oven to 450°F to preheat.</li>
<li class="instruction">While the oven is heating, Put tomatoes, garlic, 1 Tbsp extra virgin olive oil, vinegar in a bowl and mix. Add the chopped basil. Add salt and pepper to taste.</li>
<li class="instruction">Slice the bread on a diagonal about 1/2 inch thick slices. Coat one side of each slice with olive oil using a pastry brush. Place on a cooking sheet, olive oil side down. You will want to toast them in the top rack in your oven, so you may need to do these in batches depending on the size of your oven. Once the oven has reached 450°F, place a tray of bread slices in the oven on the top rack. Toast for 5-6 minutes, until the bread just begins to turn golden brown.</li>
<li class="instruction">Align the bread on a serving platter, olive oil side up. Either place the tomato topping in a bowl separately with a spoon for people to serve themselves over the bread, or place some topping on each slice of bread and serve. If you top each slice with the tomatoes, do it right before serving or the bread may get soggy.</li>
<li class="instruction">Serves 6-10 as an appetizer. Or 3-4 for lunch. You may want to top with some fresh mozzarella cheese (optional)</li>
<li class="instruction">Yield: Makes 24 small slices.</li>

<li class="instruction">Find lengthwise seam in dough. Beginning at seam, gently unroll dough into a rectangle on a lightly floured surface. Roll dough into a 13 x 8-inch rectangle; brush with butter, leaving a 1/2-inch border.</li>
<li class="instruction">Combine sage, salt, and sausage. Sprinkle sausage mixture evenly over dough, leaving a 1/2-inch border; top with cheese. Starting with a long side, roll dough up, jelly-roll fashion; press seam to seal (do not seal ends of roll).</li>
<li class="instruction">Cut 1 (1/2-inch-thick) crosswise slice from each end; discard. Slice roll crosswise into 12 (1/2-inch-thick) pieces; arrange in a 13 x 9-inch baking dish coated with cooking spray.</li>

<p>Football is on at my house all weekend long.  And on Mondays&#8230;.and sometimes Thursday nights.  Then, Sportscenter plays the other days in between.  ~chuckles~ It&#8217;s ok.  I have come to terms with my football addict husband.  It has been something I have known for quite sometime.  He did not surprise me with this fact.  I knew he loved it when I met him.</p>
<p>Now my kids are on the bandwagon.  Cheering for teams, first downs, and touchdowns.  It really is pretty cute! So, on football days we are all about the snack foods, and appetizers.  This is one from the back of the ole&#8217; recipe box.  Forgotten, but still loved! It is making it&#8217;s way back into rotation.  You should try it!</p>

<li class="ingredient">1 (8oz) package cream cheese, softened</li>

<li class="ingredient">2 cloves garlic, minced</li>
<li class="ingredient">1 dash lemon juice</li>
<li class="ingredient">2 tablespoons chopped fresh parsley</li>
<li class="ingredient">2 tablespoons mayonnaise</li>
<li class="ingredient">1/4 teaspoon Worcestershire sauce</li>
<li class="ingredient">salt, to taste</li>
<li class="ingredient">pepper, to taste</li>

<p>The typical starchy side dishes in my house are rice, mashed potatoes, french fries, baked potatoes, and pasta.   Not the most creative list in the world, but one of those things goes with almost every meal and is kid friendly.</p>
<p>You can dress them up or just have them plain Jane.  I love that the simplicity of potatoes allows them to be dressed in almost anything; Ketchup, cheese, sour cream &amp; chives.  These is a twist on classic mashed potatoes.  I love doing this with my left overs.  I tend to mash enough potatoes for an army! Then they stretch over 2 dinners!</p>

<li class="ingredient">4 pounds russet potatoes, peeled, cut into 1-inch pieces</li>
<li class="ingredient">1 cup whole milk</li>
<li class="ingredient">1/2 cup (1 stick) butter, melted</li>
<li class="ingredient">1 1/2 cups grated mozzarella</li>
<li class="ingredient">1 cup freshly grated Parmesan</li>
<li class="ingredient">Salt and freshly ground black pepper</li>
<li class="ingredient">2 tablespoons plain dry bread crumbs</li>

<ol>
<li class="instruction">Preheat the oven to 400 degrees F. Coat a 13 by 9 by 2-inch baking dish with 1 tablespoon of butter and set aside.</li>
<li class="instruction">Cook the potatoes in a large pot of boiling salted water until they are very tender, about 15 minutes. Drain; return the potatoes to the same pot and mash well.</li>
<li class="instruction">Mix in the milk and melted butter. Mix in the mozzarella and 3/4 cup of the Parmesan. Season, to taste, with salt and pepper.</li>
<li class="instruction">Transfer the potatoes to the prepared baking dish.</li>
<li class="instruction">Stir the bread crumbs and remaining 1/4 cup of Parmesan in a small bowl to blend. Sprinkle the bread crumb mixture over the mashed potatoes.</li>
<li class="instruction">Recipe can be prepared up to this point 6 hours ahead of time; cover and chill.</li>
<li class="instruction">Bake, uncovered, until the topping is golden brown, about 20 minutes.</li>

<li class="ingredient">1 tsp Vanilla</li>

<li class="instruction">Preheat Oven to 300 degrees</li>
<li class="instruction">In a large bowl mix Oats, fruit, nuts, and Sunflower Seeds or coconut.</li>
<li class="instruction">In a small saucepan heat honey and oil until they form a syrup&#8230;about 2 minutes over medium heat. Remove from heat and mix in vanilla.</li>
<li class="instruction">Pour Honey Syrup over granola mix and stir to coat.</li>
<li class="instruction">Quickly spread granola over large baking sheet and bake at 325 degrees for 40 minutes. Stirring occasionally so it does not burn.</li>
<li class="instruction">Allow to cool on pan for 15-20 minutes and then break into pieces and store in an air tight container.</li>

This is one of the best muffin recipes I have EVER made.  Honestly!  Having one of these and a nice hot cup of coffee is a super happy thought.  I am going to bake a batch today to warm the house and my thoughts up.</p>

<p align="justify">I love feeding my kids a nice hot breakfast, but let’s be completely honest.  I am not a morning person.  I am not June Cleaver and I will not wake up at 5 AM just to put a hot breakfast on the table.  Most mornings it is cold cereal, granola bars, or microwave oatmeal on my table.  If my kids eat a hot breakfast, it is usually because I am cooking it for dinner.</p>
<p align="justify">Now this recipe is something that is right up my alley.  Baked oatmeal is not something that I had tried before, but it sounded delish and I was intrigued.  So I tweaked the recipe a bit for my family and whipped up a batch in less than 5 minutes.  Tossed it in the oven and my house smelled like a fresh pan of Oatmeal cookies.</p>
<p align="justify">My son is my pickiest eater and typically will not eat oatmeal, let me just say he ate this up and wanted seconds.  It is that good! So if you are looking for something nutritious to feed your little ones for breakfast but don’t want to get up early.  Bake a pan of this the night before. <p>Tomorrow is the first day of school for my babies.  I wanted something fun, memorable, and nutritious in their lunch box. We laugh that they are little Book Worms because both of them love to read, so I took the theme and ran with it.</p>

<p>For the Main course I made “Worm Salad”.  All it is is spaghetti noodles, diced chicken, and veggies of your choice.  I chose sugar snap peas and diced tomatoes.  Toss it with their favorite dressing.  My kids can eat their weight in this stuff! Of course…you can use gluten free pasta!</p>

<p>Grapes are a fun addition to any lunch, but these caterpillars are almost too cute to eat.  All I did is take a plastic drinking straw and pushed the grapes on it.  After I added three grapes I cut the straw with a pair of scissors.  Take some dry spaghetti noodles and break them into small pieces for the antenna and the legs.  These are so stinking adorable!</p>

<p>Last but not least these snack butterflies are so much fun for snack time or for the lunch box.  You can put anything inside a sandwich sized ziploc.  Just pinch in the middle with a clothes pin…draw on a face, and you have a butterfly!  These are a great preschool snack too.</p>
<p>If you really want to keep going with the theme, take a piece of construction paper and wrap the juice box.  Label it “BUG JUICE”, maybe draw a beetle or 2.  This idea is perfect for your little bookworms, or a great idea to save for Halloween.  My kids love a buggy lunch!</p>

<p align="justify">I love thinking outside the box!  I try to feed my kids healthy but fun foods, and this is a genius idea!  <strong>Applewiches</strong>!  Just use the Apple as the bread and fill it with your favorite peanut butter, sunflower butter, almond butter, etc.  You can even make it a little fancier by rolling it in peanuts, raisins granola, etc.</p>
<p align="justify">Core the apple, you can peel it if you have a picky eater.  Use a firm apple; I used fiji apples. After you core and slice the apple place them in a bowl of water with 1 tbsp of lemon juice.  The citric acid in the lemon juice stops the apples from turning brown. Then pat them dry and use them for your sandwich “bread”.  My kids love these! I know yours will too! Plus, they are <a href="http://afewshortcuts.com/tag/gluten-free">Gluten Free</a> &amp; Dairy Free!</p>
