<p>I feel like a mess lately!  There just aren&#8217;t enough hours in the day to do it all.  I think I am running in so many directions that I just don&#8217;t have time to focus my energy on one thing for long.  So when I find a recipe for a quick, nutritious meal that I think my family will eat (<em>or atleast pick apart and eat pieces</em>) I am all over it.</p>
<p>This great Penne with Chicken &amp; Asparagus can be thrown together practically at any time.  Most of the ingredients come right out of your stockpile and make you life a little easier!  Try this one out! It is fabulous!</p>

<li class="ingredient">5 tablespoons olive oil, divided</li>
<li class="ingredient">2 skinless, boneless chicken breast halves &#8211; cut into cubes</li>
<li class="ingredient">salt and pepper to taste</li>
<li class="ingredient">garlic powder to taste</li>
<li class="ingredient">1/2 cup low-sodium chicken broth</li>
<li class="ingredient">1 bunch slender asparagus spears, trimmed, cut on diagonal into 1-inch pieces</li>
<li class="ingredient">1 clove garlic, thinly sliced</li>
<li class="ingredient">1/4 cup Parmesan cheese</li>
</ul>

<ol>
<li class="instruction">Bring a large pot of lightly salted water to boil. Add pasta, and cook until al dente, about 8 to 10 minutes. Drain, and set aside.</li>
<li class="instruction">Warm 3 tablespoons olive oil in a large skillet over medium-high heat. Stir in chicken, and season with salt, pepper, and garlic powder. Cook until chicken is cooked through and browned, about 5 minutes. Remove chicken to paper towels.</li>
<li class="instruction">Pour chicken broth into the skillet. Then stir in asparagus, garlic, and a pinch more garlic powder, salt, and pepper. Cover, and steam until the asparagus is just tender, about 5 to 10 minutes. Return chicken to the skillet, and warm through.</li>
<li class="instruction">Stir chicken mixture into pasta, and mix well. Let sit about 5 minutes. Drizzle with 2 tablespoons olive oil, stir again, then sprinkle with Parmesan cheese.</li>

<p>Ok, let me see if I can stop smiling long enough to type this.  Pillsbury invited <strong>ME</strong> to help them host their <strong><a href="http://www.pillsbury.com/bakeoff/rookiebakeoff/">Pillsbury Rookie Bake Off Challenge</a></strong> this year.  Yep…me!  I think I have been smiling for weeks about this one.</p>
<p>Basically they are looking for people to come up with recipes that are 5 ingredients or less in 30 minutes or less.  Each week has a different theme. My theme…which hasn’t been announced yet…so you are in on some hush hush info…..is Thanksgiving Shortcuts and will go live November 14th.  So, the deal was I needed to come up with a recipe.  That part was easy!</p>
<p>I made these Turkey Pot Pie Pockets.  The great part is you can substitute Chicken.  I amazed myself at how good these bad boys are.  I made them for lunch the other day and I asked my husband what he wanted for dinner.  I got this stare from across the room, and he said ,” Can’t we have these for dinner too?”  So not only are they easy, they are delicious too.</p>
<p>This year when you have all that leftover turkey staring back at you from the fridge you will know what to do with it.</p>

<li class="instruction">Preheat oven to 350 degrees. And line a baking sheet with parchment paper.</li>
<li class="instruction">In a large bowl mix together the turkey, veggies and soup.</li>
<li class="instruction">Unroll the crescent rolls and separate into 4 rectangles. Press the seam together in the center of the rectangle.</li>
<li class="instruction">Place 2 tbsp of filling on each rectangle, and fold the dough over covering the filling.</li>
<li class="instruction">Seal each pocket with a fork pressing down to pinch the edges together.</li>
<li class="instruction">Place on baking sheet and bake for 15 minutes at 350 or until golden brown</li>

<p>I am always looking for kid friendly meals that will please the whole family.  Let’s admit, there are only so many times a year you can eat chicken nuggets without turning into one.   So I figured I would experiment in the kitchen this afternoon.   I started pulling out some easy ingredients for a chicken dressing that was so good, the little ones asked for seconds, and so did the hubby.</p>
<p>This meal is super easy, and affordable which helps it earn 5 stars in my book.  Plus, dinner was on the table in 30 minutes or less. Gotta love it!</p>

<li class="ingredient">Salt and freshly ground black pepper</li>
<li class="ingredient">1 tablespoon vegetable oil</li>
<li class="ingredient">8 tablespoons honey</li>
<li class="ingredient">Sprinkle of dried cilantro (cause I wanted to be fancy)</li>
<li class="ingredient">2 teaspoons hot pepper sauce, such as Tabasco or Crystal brand</li>
<li class="ingredient">1 teaspoon freshly squeezed lemon juice, or to taste (optional)</li>
</ul>

<li class="instruction">Salt and Pepper the chicken tenders. In a large skillet over medium-high heat, heat the oil. Add the chicken and cook, turning as necessary, until cooked through, about 5 minutes per side, depending on the thickness.</li>
<li class="instruction">Meanwhile, in a small bowl, combine the honey, hot red pepper sauce, cilantro, and lemon juice. Taste and adjust the ingredients as needed. You may want to use less hot sauce and add it to taste. If you use too much hot sauce right off the bat, you can add more honey and lemon juice to cut the spice.</li>
<li class="instruction">As you remove the chicken from the skillet dip it in the sauce before plating. You can also serve some of the sauce on the side for dipping.</li>

<p>I originally posted this recipe as a side dish on <a href="http://momswithcrockpots.com">Moms With Crockpots</a> the other day.  The thing is, I wanted to turn it into a meal.  It was so good as a side dish I knew it could be easily transformed into a dinner.  I added 2 cups of cooked diced chicken breasts, but you could add 1 lb of cooked ground beef (drained).  Either way it turns this crockpot side dish into an amazing crockpot meal.</p>
<p>My crockpot has been such a big time saver for me lately.  Between running people to and from school, homework, and the blog I just don&#8217;t have a ton of time to spend in the kitchen. If you are like me running in 10 different directions, try this dinner. It is a winner at my house!</p>

I don’t like this.” ~sigh~ This is one of the hardest tasks a mom faces. Finding a meal that the whole crew will eat.</p>
<p>Well here is a twist on basic tacos that is sure to please! Pillsbury refrigerated rolls are on sale everywhere right now making this a very affordable and convenient meal.  You can make a couple batches ahead and freeze for a quick dinner or easy hot lunches!</p>

<li class="ingredient">1/4 teaspoon ground cumin</li>
<li class="ingredient">3 tubes (8 ounces each) refrigerated crescent rolls</li>

<li class="instruction">In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the cheese, salsa, chilies, garlic powder, hot pepper sauce, salt and cumin.</li>
<li class="instruction">Unroll crescent roll dough and separate into 12 rectangles. Place on ungreased baking sheets; press perforations to seal. Place 1/2 cup meat mixture in the center of each rectangle. Bring four corners to the center and twist; pinch to seal.</li>
<li class="instruction">Bake at 350° for 25-30 minutes or until golden brown. You can freeze baked Taco Twists for up to 3 months in a heavy-duty resealable plastic bag.</li>
<li class="instruction">To use frozen Taco Twists: Bake frozen twists on an ungreased baking sheet at 350° for 20 to 25 minutes or until heated through. Yield: 12 servings.</li>

<p>I am getting all in the Fall mood.  We are going Apple Picking this weekend, I bought burlap to make a table decoration, I am thinking pumpkins, and trying to get used to this cooler weather.  When I saw Italian Sausage on sale a Target this week I knew that this meal was on the menu.</p>
<p>This is one of my most requested, most borrowed recipes and it is so simple!  That is why we love it!<strong> </strong><a href="http://afewshortcuts.com/2010/08/weekly-meal-deal-italian-sausage-potato-roast-105-serving/">Italian Sausage and Potato Roast.</a>  This will send the smells of the sausage and the pepper through your house.  People walking down the road will get hungry. LOL</p>
<p>This is also great for the kids!  While they may not eat the peppers, all of my kids LOVE this meal.  I may tell my son that it is hot dogs ~giggle~ but he eats them.   Serve this with a simple tossed salad and some delicious <a href="http://afewshortcuts.com/recipes/2010/03/tide-tuesday-homemade-french-bread/">Homemade French Bread</a> and you have an amazing meal on the table in no time!</p>

<p align="justify">I am all about ease this week and looking toward things I can either re-heat or make ahead and reheat.&#160; These <a href="http://afewshortcuts.com/2010/12/weekly-meal-deal-cheesy-chicken-empanadas/">Cheesy Chicken Empanadas</a> are just the trick.&#160; Not only are the OH SO GOOD, but I can make a bunch and freeze them.&#160; That way when my husband says “I’m Hungry, what do we have to eat?” I can point him right toward the freezer.</p>
<p>The original recipe calls for pie dough, but you could also make these with Pillsbury crescent rolls that have been on sale everywhere lately. Serve with a side salad, guacamole and chips, or just eat them by themselves.&#160; They are just good!</p>

<p>A Few Short Cuts started over 2 years ago to share simple, family friendly recipes, that use ingredients that are currently on sale in the store.  This week is a meal that does exactly that.  I think I love this Meal Deal so much because you can really prep ahead for a second meal with this one.</p>
<p>When I buy ground beef, which I typically do in bulk,  I do several things.  I make hamburger patties, I make <a href="http://afewshortcuts.com/2009/10/weekly-meal-deal-mini-meatloaves/">Meatloaf mix</a>, I divide it into 1 lb bags for meals, and I make <a href="http://afewshortcuts.com/2010/01/weekly-meal-deal-meatball-subs-1/">meatballs</a>.  <a href="http://afewshortcuts.com/2010/01/weekly-meal-deal-meatball-subs-1/">Meatballs</a> can be use for spaghetti, <a href="http://afewshortcuts.com/2010/01/weekly-meal-deal-meatball-subs-1/">grinder</a>, and these delicious pizza pockets.</p>
<p>This week Target has the Pillsbury Refrigerated bread products B3G1 Free and there is a coupon that makes the Market Pantry Pasta sauce $0.50!  You can’t get a much better deal than that!</p>

<p>School is starting soon for some!  My kids start back in a couple weeks.  I know I am going to be really busy for the first few weeks trying to get back into the swing of things.  So I am trying to make it easy on my self, and plan ahead. The best way for me to do that is get some meals in the freezer!</p>
<p>I like to make dinners that I can just double.  Serve 1/2 for dinner, and put 1/2 in the freezer.  Then one night when I am busy all I have to do is thaw and reheat! Some people like to take a day to just cook meals for the freezer.  I am not that organized.  I can admit that!  So, making double meals works better for me.</p>
<p>Right now Bell Peppers are all over the place, and very reasonable. These <strong><a href="http://afewshortcuts.com/2010/06/weekly-meal-deal-stuffed-bell-peppers-107person/">Stuffed Bell Peppers</a></strong> are very simple to double and freeze! The other ingredients will be found in your stockpile, or are very easy on the budget. Purchase some aluminum toss away pans at the dollar store for your freezer meals.  These are great for the freezer, and easy clean up!</p>
<p>Over the next couple weeks I will be sharing other easy Dinners that can be doubled and frozen for quick dinners!</p>

<p>I have about decided that Summer time is the worst time to save money on groceries.&#160; The sales have been less than spectacular here, which is ok.&#160; I have been so busy with the kids I haven’t had the amount of time I usually do to clip coupons and plan my trips. That is why I am so happy I stockpile.&#160; I have been able to get away with smaller grocery trips for fresh items only.</p>
<p>I have seen a few items on sale, and I am all about fresh ingredients right now.&#160; Fresh produce is in abundance everywhere you look! These <strong><a href="http://afewshortcuts.com/2010/07/weekly-meal-deal-south-border-stuffed-chicken/">South of the Border Stuffed Chicken Breasts</a></strong> were calling my name! <p>I grabbed my ingredients and turned my hubby loose with the grill. This meal is so delicious, quick, and easy.  You can even grill ahead of time for quicker prep. <p>There is nothing like a freezer full of low cost ingredients that make you come up with a recipe to use them.  I have been shopping at Target for most of my groceries since moving to Iowa.  They seem to have the best deals for my families needs.</p>
<p>Right now Target has Ore Ida Potatoes B2G1 plus there was a $1 Sweet Potato fries coupon a couple weeks ago.  When all is said and done you can get the Sweet Potato fries for $1 a bag.  If you haven’t tried these bad boys yet you should! They are delicious!</p>
<p>I had a great recipe for a sweet potato chicken casserole, that I changed up a bit to include the Sweet Potato fries instead of chunks of sweet potatoes. We had an impromptu movie day today and it made for a super quick supper!</p>
<p>That is the other thing that I love about this recipe, it can be thrown together in minutes.  If you precook your chicken, dice it and pop it in the freezer, it can be ready to go in minutes!  I love quick meals!</p>

<li class="instruction">In a shallow bowl, mix the mustard, honey, mayonnaise, and steak sauce. Set aside a small amount of the honey mustard sauce for basting, and dip the chicken into the remaining sauce to coat.</li>
<li class="instruction">Lightly oil the grill grate. Grill chicken over indirect heat for 18 to 20 minutes, turning occasionally, or until juices run clear. Baste occasionally with the reserved sauce during the last 10 minutes. Watch carefully to prevent burning!</li>

<p>This is a fresh Summery dinner, that even the kids will love.  My favorite part is you can grill or cook the chicken in advance and slice it for this salad.  No heating the kitchen! It is so nice to be able to cook food for several meals at once.  It saves a ton of time during the week.</p>
<p>This salad is delicious by itself, or amazing with <a title="Tide You Over Tuesday: Homemade French Bread" href="http://afewshortcuts.com/2010/03/tide-tuesday-homemade-french-bread/">Homemade French Bread</a>.  I need to get in the kitchen and figure out how to make it Gluten Free because this is truly some amazing bread!</p>
<p>Throw a couple extra chicken breasts on the grill this week and have this delicious Raspberry Chicken Salad for dinner one night this week!</p>

<p>The kids are out of school, and the mess has begun!  We officially through caution to the wind, and jumped into our first craft project today and now I am covered in paint. The last thing I wanted to do was make a mess in the kitchen too.  Luckily for me, my Hubby loves to grill.  These thick juicy pork chops are so flavorful and delicious.  The kids love them because they are made with root beer.  I love them because they taste like they came out of a 5 Star restaurant, and I didn&#8217;t have to cook them.</p>
<p>These are perfect served with<strong> <a href="http://afewshortcuts.com/2011/05/tide-you-over-tuesday-grilled-corn-with-flavored-butters/">Grilled Corn and Flavored Butters</a></strong>, or those<strong> <a href="http://afewshortcuts.com/2011/06/tide-you-over-tuesday-roasted-grape-tomatoes/">Roasted Tomatoes</a></strong> I posted Tuesday.  If you want to keep dessert on the grill too, these<a href="http://afewshortcuts.com/recipes/2010/05/snackurday-gooey-banana-boats/"><strong> Banana Boats</strong></a> are so much fun!</p>

<li class="ingredient">1-2 teaspoons chipotle-flavored hot sauce</li>
<li class="ingredient">1 1/2 TBSP Worcestershire sauce</li>
<li class="ingredient">1 pinch salt, to taste</li>

<li class="instruction">Place the pork chops in a dish; pour 2 cans of the root beer over the chops. Place in refrigerator to marinate at least 2 hours. Preferably overnight or all day.</li>
<li class="instruction">Remove the pork chops from the root beer; season with salt and pepper.</li>
<li class="instruction">Combine the remaining can of root beer, the beef stock, brown sugar, hot sauce, and Worcestershire sauce in a saucepan over medium heat; simmer the mixture until it reduces to about 3/4 cup. Set aside.</li>
<li class="instruction">Preheat an outdoor grill for medium-high heat, and lightly oil the grate.</li>
<li class="instruction">Grill the pork chops on the preheated grill until the no longer pink in the center, about 8 minutes per side. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).</li>
<li class="instruction">Brush the chops generously with the reduction sauce and continue cooking for about 2 minutes more per side.</li>
<li class="instruction">Remove from grill and brush with any remaining sauce. Season with salt to taste before serving.</li>

<p>I am a cookbook collector. I used to just say I like reading cookbooks, but the stacks of them around the house now scream collector.  I started reading cookbooks to learn how to cook.  I had no clue what I was doing.  The first meal I made for my husband was spaghetti.  The second…Hamburger helper.  It is amazing he survived, but he is loving my cooking now.</p>
<p>Cookbooks gave me insight to something I knew nothing about. Well, very little. It always amazes and intrigues me that when you look at an old cookbook they include branded items, like Gold Medal flour, or Hershey’s Cocoa. These were basically advertisements for these companies, but they produced some amazing recipes. I have found some very odd product that I never even knew existed before.</p>
<p>Well, this recipe is not an advertisement, but a great recipe that I found for Chicken Pasta Primavera that takes minutes to make (you know I am all about shortcuts!).  It comes from Kraft, but can be tweaked to make it your own, and be a show stopper for dinner!  Plus, most of the ingredients are on sale at Target right now!</p>

<ul>
<li class="plaincharacterwrap ingredient">1 pound boneless skinless chicken breasts, cut into bite-size pieces</li>
<li class="plaincharacterwrap ingredient"> 2 cups frozen stir-fry vegetables (broccoli, carrots, red peppers, snow peas)</li>
<li class="plaincharacterwrap ingredient"> 1 (10 ounce) tub PHILADELPHIA Italian Cheese and Herb Cooking Creme</li>
<li class="plaincharacterwrap ingredient"> 2 cups hot cooked fettuccine or other pasta</li>
</ul>
Directions<br />

<li><span class="plaincharacterwrap break"> Cook and stir chicken in large nonstick skillet on  medium heat 5 to 6 min. or until done. Add vegetables; cook 2 to 3 min.  or until heated through, stirring occasionally. </span></li>
<li><span class="plaincharacterwrap break"> Add cooking creme; cook and stir 3 min. </span></li>
<li><span class="plaincharacterwrap break"> Stir in pasta. </span></li>
